Spanish Chicken Risotto

Ingredients

6 portion(s)

  • 1 brown or red onion
  • 3 cloves garlic
  • 1/2 red chilli
  • 500 g chicken thighs (diced)
  • 130 g chorizo sliced
  • 2 capsicums (red/green) diced
  • 1 tsp tumeric
  • 2 tsp cumin ground
  • 2 tsp smoked paprika (good quality)
  • 1/4 tsp cinamon
  • 100 g white wine
  • 400 g Tin Tomatoes Diced
  • 100 g water
  • 2 tablespoon TMX stock concentrate or chicken stock paste
  • 200 g arborio rice
  • 20 g oil

Recipe's preparation

  1. Add onion, garlic and chilli (if using) to bowl and chop for 3 seconds on speed 7.  Scrape down the sides add 20g oil and saute for 5 minutes @ 100 deg speed 1.

  2. Add chorizo, chicken, spices and capsicum and cook for 5 minutes at 100 deg on speed 1 Counter-clockwise operation

  3. Add rice and wine.  Cook for  2 minutes at 100deg speed 1 Counter-clockwise operation

  4. Add tomatoes, stock and water and add.  Cook for 15 minutes at 100 deg on speed 1 Counter-clockwise operation.  NB: this will give a thick consistency so if you would prefer a looser dish add more water.

  5. Put into Thermoserver and allow to rest for 10 minutes prior to serving.

    Great flavours. Like others, I reduced the paprika to 1 teaspoon and cooked the spiced with the onion. I also cooked the chorizo and chicken on the stove to ensure they were crisp, and added a bit more water. Fed a family of 4 comfortably. Would definitely make it again.

    great filling dish as it fills the bowl! The only thing I would do different is to cook off the spices with the onion as the raw spice taste kind of lingered after I was finished.

    Going to cook this tonight but 500g of chicken to 200g of rice seems like a lot. Just wondering whether anyone thought there was too much chicken in it or whether anyone has adjusted the quantities of rice/chicken?

    I'm never making risotto on the stove again! This tasted amazing and will definately be a dinner favourite. I added diced carrot for some extra vegies and omitted the chorizio. Oh and threw some fresh parsley in at the end for a few minutes.

    This was one of my first thermomix meals and still a favourite. It has so much flavour as I find some other risotto recipes a bit flavourless. I sometimes cook a bit of rice to add to it to soak up the sauce a bit more and sprinkle parmesan cheese on top. Also I've never used the chorizo, already has so much flavour !

    Made this for the first time tonight. We have made lots of risottos since we got thermie but this was not a favourite. I felt the paprika took over the dish so maybe 1 tsp would have been better? In saying that, the reason i tried it was because the reviews were so good so maybe its just my families taste (2 kids and 2 adults). We are normally pretty adventurous but the kids hated it, i wasn't a fan and hubby said it was ok!! Thank god for the sticky date pudding for dessert!!!

    yum! I added a zucchini, peas and you could easily add some sea food and make this a paella!
