Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
I recommend making the white sauce first, set aside and continue with the meat sauce without washing the bowl
Place all cheesy white sauce ingredients in the TM bowl and cook for 12 minutes, 100 degrees, speed 3. Once cooked, transfer the sauce into a separate bowl and set aside while you prepare the meat sauce. Without washing the bowl, place onion, garlic and carrots in the TM bowl and chop for 5 seconds, speed 5. Scrape down sides of bowl, add oil and sauté for 2 minutes, 100 degrees, soft spoon speed (slowest speed setting), MC OFF.
Add tomato paste or pesto and cook for 1 minute, 100 degrees, soft spoon speed (slowest setting), MC OFF.
Add tomato passata, salt, pepper and stock concentrate and cook for 3 minutes, 100 degrees, soft spoon speed, MC ON.
Place mince into TM simmering basket and spoon some of the sauce over the top of the mince. Put the basket (with mince inside) into the TM bowl with the sauce. Cook for 15 minutes, 100 degrees, speed 1. About halfway through cooking break up the mince using a fork.
Tip mince out of the basket and into the TM bowl with the sauce. Cook for a further 5 mintues, 100 degrees, reverse, soft spoon speed.
Preheat oven at 180 degrees.
Now it's time to assemble your lasagne. Start by spooning some of the meat sauce into the bottom of a baking tray. Spoon some white sauce over and then top with lasagne sheets. Spoon another layer of meat sauce, then white sauce and top with lasagne sheets. Repeat this layering until all the sauce is used, finishing with white sauce on top. Sprinkle with grated cheese and bake for about 30 minutes until cheese has melted.
Let the lasagne rest before serving, preferably for a few hours if you have time (reheat before serving), otherwise for about 15-20 minutes if not making ahead of time. Serve on its own or with salad/chips and enjoy!!

Tip
This recipe is very versatile and any ingredients can be added to your preferred taste, like extra veg, herbs, spices, sugar etc.
The cheese sauce is based on the recipe for bechamel sauce in the basic cookbook, however I have halved it and added cheese.
I find the lasagne is best when made a few hours or even a day ahead.

Looooove this recipe. It's a weekly staple for us, and a great way for me to use up leftover veg. I sub some of the meat for lentils, and add short pasta at the point of tipping the meat into the bowl, and it's perfect every time. Saves me having to make it into a lasagne. I hope thermomix automates this recipe. It's the best!!! Thanks for sharing!

This is an amazing lasagne recipe! This is my second time making it, and these are my proposed changes based on simplification/chef choice:
1. Add tomato paste, passata and beef stock in one step?
2. Place beef mince directly into tomato sauce, instead of basket, cook 20 minutes/100/reverse speed 2?
3. Use sharp cheddar in the cheese sauce. My first time I used parmesan, but decided cheddar would be worth the try, as this is what the administrator suggested she uses.
Absolutely a winner recipe!

I have had my Tmix for a week now, so this is one of the first recipes I have tried. I didn't know what MC meant, but I used reverse blade on "gentle stir" and the sauce turned out great. I look forward to eating it tonight with my family. I also rarely make lasagne because it is so time-consuming. This recipe with the Tmix makes lasagne EASY and FAST! I tasted the sauces (meat red sauce and cheese sauce) and they are so delicious. Great flavor! I added about 1 tsp salt to the cheese sauce total. Thank you for sharing the recipe.
Question: what cheeses do you all use for the cheese sauce? I used only parmesan, but I am curious what you all choose, since this ingredient is left to the cook to choose!

This lasagne is delicious. Thank you for sharing! The tip to use the simmer basket to cook the meat is especially helpful. When I've made bolognaise sauce in the past by placing the mince straight in the bowl the texture becomes like a puree. Problem solved! This will be a week night family meal favourite.
