If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place TM steaming basket into TM bowl.
Weigh rice into basket then rinse under cold tap water, gently massaging the rice with your fingers whilst rinsing.
Put the TM basket into the TM bowl and add coconut milk, water, salt and pandan leaf (if using). Cook for 22 minutes on varoma speed 4. Turn the speed up to 5 or 6 for a few seconds only, until the liquid rinses over the rice in the basket, then turn back down to speed 4.
When the rice has finished cooking, remove the basket and place into a thermoserver or large metal bowl. Pour 2-3 tablespoons of the cooking liquid over the rice, then cover the thermoserver with alfoil. Let the rice rest in the basket and thermoserver for 10 minutes, remove the pandan leaf, then fluff with a fork before serving.

Tip
I use Ayam brand coconut milk or cream for this recipe.
Jasmine rice works well.
If a more subtle coconut flavour is preferred, skip the step of turning the speed up for a few seconds when it starts cooking. And leave out pouring the extra cooking liquid to the cooked rice.

Great recipe - used 800gm coconut cream and reduced the water amount accordingly, added 1/2 teaspoon of salt, 1 teaspoon of sugar, the pandan leaf and poured all the leftover cooking liquid over the rice in the thermoserver. It was an absolute hit in our house and will be a favourite from now on.
09.02.21 - I now use 350gm basmati rice (rinsed) with 800gm coconut milk and 200gm water, 1 teaspoon of salt and 1 teaspoon of sugar and pour all the liquid over the rice in the thermoserver - rice is less gluggy and separates nicely. I do have pandan leaves in the freezer (purchased frozen from an asian grocers) to use with this rice but if you don't have them, you can place one lemongrass stalk or slices of ginger on top of the rice for additional flavour.

JacquelineSinclair: sorry you've had a bad experience with this. I created the recipe specifically because every other coconut rice has no flavour in it. This works a treat! Do you use pandan leaves? And are you using the faster speed as per the recipe, to get the liquid to rinse over the rice when you first put it on?

So, I am a mad fan of coconut
So, I am a mad fan of coconut rice from the Thai take away shops. But after i got a bad one. I decided I could make it myself.
I didn't wanna waste the coconut milk left in the tin. So I used both tins (800g) and reduced the water measurement accordingly. I also reduced the salt after reading the reviews. And added 1tsp of sugar. I also added a small handful of shredded coconut with the rice. I followed all the directions and put nearly all the remaining liquid on top in the thermoserver. I didnt have any pandan in the cupboard so I went without. I will try and get some next time.
The result. Delish!! Better than the Thai shop! Wish I had the pandan tho.

Sri Lankans LOVE a lot of salt on their rice, so it does depend on the cuisine. I cook coconut rice often for Sri Lankans at work and they absolutely coat it with salt. Not sure what other countries do it.. but for me, this recipe is perfect for what I need it for. For home cooking though.. yup I'd be reducing the salt a lot like you did. Just a little educational visit
