The Best Macaroni and Cheese

Ingredients

6 portion(s)

Cheese Sauce

  • 120 grams Tasty cheese
  • 60 grams pamersan cheese
  • 45 grams plain flour
  • 50 grams Butter
  • .1/2 teaspoon salt
  • 500 grams Milk

Pasta

  • 400 grams Dried Elbow Pasta, Add or Subtract to your own judgement

Recipe's preparation

  1. Start by boilng saucepan of water for pasta, season water. Add dried pasta when boiling. 

    Add both tasty and pamersan cheese to Thermomix Bowl and grate 5 Secs/Speed 8.  Add all ingredients and cook 7 - 8 Mins/Speed 3/90 Degrees.  

     

    Once completed and pasta is cooked, drain pasta and drop back into saucepan.  Add Cheese sauce to pasta and carefully combine.  Serve.....I take no responsibility if you eat this whole thing on your own.  I know I have in the past (oops).  Enjoy.....there is nothing better on a cold winters day/night then the smell, taste and texture of Mac & Cheese tmrc_emoticons.) 

     

    I have cooked double the mixture a couple of times now.  It just fits in the Bowl and is great for a big feed if having heaps of kids/big kids around.  When chopping the cheese....leave it go for about 15 seconds and make sure to cook the sauce for at least 16 mins.  The sauce covers 800gs of elbow pasta perfectly anymore and I find it doesnt cover enough and becomes kind of cluggy.  But make sure you dont use anything but good plain flour and most definitely don't use pre grated cheese as the anticaking agent in grated cheese clogs up the sauce and trust me....its tastes so much better when made from the block for both type of cheeses tmrc_emoticons.)

     

    I cant stress enough how much the best quality cheese you can get makes such a difference with this dish.  Mix it up also....try some different types of cheese to create different flavours!!

    Oh WOW!! So glad I found this recipe, dinner done in 20 minutes on a day where I just couldn't be bothered. Added in a bit of Dijon mustard, pepper and chorizo as I had no bacon. I reckon if you baked it in the oven with bacon bits and and breadcrumbs it'd take it to a whole other level.

    This is the absolute best! I have made it a few times now. I've fried up some bacon and added that before topping it with some panko bread crumbs some more chese and under the grill it goes. I've also added a half tsp of mustard as well as a pinch of nutmeg. Absolutely DELICIOUS! Thank you for sharing.

    I reduced the pasta to 250g to get 2 portions out of a packet and because I don't like it too dry. I bake mine topped with breadcrumbs and cheese so it goes dry as it soaks up the liquid. This prevented that problem.

    Yum. I added a bit of vegetable stock paste, frozen spinach and peas with the rest of the ingredients. Also added chopped pumpkin, carrot and zucchini in the first step. Lots of hidden veggies! This is my go-to recipe for a guaranteed winner with the kids.

    This Mac and cheese was delicious! So quick and easy too. That sauce!! WOW! So smooth, creamy and silky - best cheese/white sauce I have made in the Thermomix!! I used Mainland tasty cheese and bakers flour for the flour as that's what I had, and no floury taste at all, so will use that again next time. I added 4 shortcut pieces of bacon in with the cheese to chop and that added such a nice flavour to the cheese sauce. I followed the suggestions in the comments and added 1/2 teaspoon each of garlic powder, onion powder and dijon mustard. Plus I added 1 teaspoon stock paste instead of the salt in recipe. I ended up putting it in an oven dish, topping with cheese, mixed herbs and smoked paprika and oven baked till golden. Thanks for a yummy mac and cheese recipe tmrc_emoticons.)

    OMG best ever! Forget the pasta, I could just drink the sauce! I added 2 rashers of bacon and a small onion at the very start, chopped nice and small on speed 5 then cooked 2min at 100°. I also added smoked paprika, garlic, onion powder and dijon mustard. About 1/2 tsp of each.

    My son says its the best Mac and cheese in the world!!!!!! He actually typed that in himself. We love, love, love this recipe and it’s a winter regular in our house. I cook 500g pack of macaroni and find there is enough sauce for that much pasta. I also add frozen peas to the pasta when cooking and we often fry up some sausages then chop them and add to it. Makes heaps and always goes down well. Thanks for the recipe Smile

    This was so good!! I added peas & corn to the pasta, and dashes of onion powder, garlic powder and paprika, plus a teaspoon of Dijon mustard to the cheese sauce.

    Definitely note the advice of using good quality block cheese, not pre-grated.

    Added a grated zucchini and carrot and cooked for 10 mins. Used a tbsp of veg stock paste and Dijon mustard as recommended. Added a tin of tuna in my serve which was nice. Next time would also add a bit of chicken stock paste, a cup of frozen veg and some ham or bacon instead of tuna. Would also use a stronger cheese because I found it a bit bland. Toddler loved it. Made heaps so I froze some.

    Really simple & tasty.

    I made this using parmesan, and a combo of colby and elbo cheese. Also added a tblsp of dijon and a tblsp of veggie stock paste (and omitted the salt) as suggested in the comments. Initially the dijon seemed a little overpowering, but this subsided.

    I only had cheap plain flour, but I cooked it for an extra minute as suggested, and there was no floury taste whatsoever.

    To ramp it up a little (after the kids grabbed theirs), I strirred through some chopped jalapenos and sprinkled with breadcrumbs, then baked it for about 20-30 minutes. OMG! Super-powered mac & cheese!!! My husband went back for thirds & still wanted more!

    This is a great recipe and this sauce will be my go-to in the future. So simple and so versatile. Thanks for sharing!

    Also did you boil the sauce? Should only go to 90degrees

    Really yummy recipe.
    I made a double batch, the kids had elbow pasta and my husband and I had it with Cauliflower.
    I added dijon mustard to the mix and also cooked some bacon and muchrooms separately to fold in.
    Was so yummy - everyone loved it.
