Abbotsford Kitchen's School Lunchbox Biscuits

  • 120 grams Butter, room temperature, or softened in Thermomix
  • 90 grams brown sugar (or 100g dark muscavado sugar)
  • 1 egg
  • 1 tsp vanilla extract
  • 140 grams wholemeal flour
  • 40 grams oats
  • 2 tablespoons Desiccated Coconut
  • 30 grams pumpkin seeds
  • 30 grams pepitas
  • 30 grams dried cranberries or craisins
  • 20-30 grams currants
  • 20-30 grams dark chocolate chips or pieces, white, milk or dark

Recipe's preparation

  1. Preheat oven to 180 degrees

    Cream the butter and sugar for about 20 seconds on speed 5-6 until pale and creamy. 

  2. Add the egg and vanilla and mix until combined-  5 seconds on speed 3

  3. Combine all the remaining ingredients and mix to form the biscuit dough - reverseCounter-clockwise operation 20 seconds, speed 3-4. Scrape down the sides and mix again if dough has not yet formed.

  4. Line a baking tray with baking paper, roll biscuit mix out into balls of whatever size you choose and place on the baking paper. Flatten biscuits a little with a fork or spatula.

     

  5. Bake for 15-20 minutes, depending on how big they are, until golden and brown on top. Let them sit for a minute or two, then carefully slide biscuits onto a wire rack and allow to cool. They will fall apart if you try to pick them up too soon.

  6. The uncooked biscuit dough can be wrapped in cling wrap or waxed paper and frozen until needed. When you need to use the frozen biscuit dough, you can put them straight from the freezer onto the baking tray and in the oven, but you will need a few extra minutes cooking time.

    These biscuits were easy to make and turned out really well.   They were delicious with white chocolate pieces.  I used sunflower seeds and pepitas as I wasn't sure what the difference was between pepitas and pumpkin seeds.  I also used 100 gm flour and 40 grams LSA instead of all flour and added 1 teaspoon baking powder.  I'll probably reduce the sugar next time.

    Really yummy biccy, just add whatever you like in the way of seeds, I like chia in them too. Used wholemeal self raising flour and they turn out just fine.  Cooking 7 If you want the butter and sugar creamier use the butterfly attachment, works a treat. Thanks for putting this recipe up I love putting them in the kids lunchboxes as a treat.
