Asian Salmon with Buk Choy and Coconut Rice

Ingredients

4 portion(s)

Asian Salmon & Buk Choy

  • 1 lemon, zested
  • 2 tablespoons fresh ginger, peeled
  • 1 tablespoons coriander
  • 2 cloves garlic, peeled
  • 1 small red chilli
  • 20 grams EVOO (extra virgin olive oil)
  • 60 grams orange juice
  • 60 grams soy sauce
  • 60 grams honey
  • 4 fillets fresh salmon, approx 200 grams each
  • 2 bunches buk choy
  • coriander, for garnish
  • Extra Virgin Olive Oil Spray

Coconut Rice

  • 230 grams basmati rice
  • 1 tablespoon TM stock concentrate (to taste)
  • 270 grams coconut milk
  • 290 grams water
  • 1/2 teaspoon salt
  • Shredded coconut, lightly toasted for garnish

Recipe's preparation

    Asian Salmon & Buk Choy
  1. Put lemon zest, 1 Tbspn of the ginger and the coriander in the TM bowl and chop for 3-5 secs on Speed 7 and set aside.

    Chop garlic, remaining 1 Tbspn of ginger and chilli for 2-3 seconds on Speed 7.

    Add olive oil and saute for 2 minutes at 100 degrees on Speed 1 with the MC off.

    Add orange juice and cook for 2 minutes at 100 degrees on Speed 1 with the MC off.

    Add soy sauce and honey and cook for 4 minutes at 100 degrees on Speed 1 with the MC off.

    Remove glaze from the TM bowl, combine with the lemon/ginger/coriander and set aside.

    Remove the skin from the salmon. Season salmon fillets with pepper.

    Place the salmon fillets on the top tray of the Varoma lined with baking paper. Pour the glaze over the top.

  2. Coconut Rice
  3. Place rice in the TM Basket and wash it thoroughly.

    Put coconut milk, water, TM stock and salt into the TM bowl and place the rice on top.

    Place the Varoma tray containing the salmon on top of the TM and cook for 15 minutes at Varoma temperature on Speed 2.

    Remove the rice and set aside in your Thermoserver for an additional 10 minutes or until the rice is tender and all the liquid has been absorbed.

    Place the Buk Choy in the bottom tray of the Varoma and with the salmon fillets and glaze on the top tray continue to cook for 5-10 minutes at Varoma temperature on Speed 2 (depending on the size of both the salmon fillets and the buk choy).

    Transfer the rice to bowls, put the steamed buk choy on, layer a salmon fillet on top and garnish with the toasted coconut and extra coriander and serve.

    I replaced the rice with cauliflower rice (fill bowl to max level with cauliflower florets, blitz Counter-clockwise operationsp 5 for 5 secs) and added broccoli, beans and zucchini with the bok Choy. I cooked salmon and rice for 10 mins, then added the vegetables and cooked for 15 mins.
    This is such a delicious, I press I've meal. The cauliflower rice was amazing

    maddunn:I had this problem too. Rinse the rice when it’s in the basket (before cooking) really well. I put the water and stick in the bowl, then place the rice in the basket on top, then pour the coconut milk on top of the rice. Increase the speed to 4 when cooking, this ensures the water washes over the rice. Mine cooked through when doing it this way.

    the fish was beautiful, but i found my rice was still a bit crunchy after the cooking time, we even left it in for the extra 10 with bok choy and it wasnt cooked. strange

    I'm thinking of making this tonight for tea. Is the liquid enough to steam the veggies too? I'm a bit confused reading this recipe. When it says put the rice into the thermoserver so the liquid absorbs does it mean the liquid from the bowl as well? Then do you add more water to the bowl to steam the veggies? Even if you don't take the liquid out it doesn't seem to be enough liquid to then go on and steam the veggies.

    Wow!!!! What am amazing glaze!!! I used sweet chilli sauce instead of chilli and I had some asparagus and green beans in the  fridge instead of bokchoy.  The glazed salmon was a taste bud sensation!!!!!

  • maybe I did something wrong

    maybe I did something wrong but I found the glaze to be a bit bitter, maybe because I didn't understand the instructions until later and put the lemon zest in and cooked it with the olive oil? and did I miss something in the instructions but I used the zest of a whole lemon and did not use the lemon Juice? It came out quite a chunky sauce, I wouldn't have called it a glaze, I must have done something wrong?

    I can't comment on the rice as I already had some coconut rice I made earlier in the fridge.

    any replies to help would be appreciated as there are so many wonderful comments I feel maybe I made a mistake somewhere?

    yes leave rice in basket, then when remove you will still have liquid in bowl to cook veg & fish.

    did you press Varoma again when did part two? Sounds like you may have forgotten & then the temperature would have slowly gotten cold. Either that or if you had no liquid in bowl no steam would have been generated.

    try again as is delicious.

     

    Had my Thermy since 2010, sharing the information as a consultant since shortly after! Jump on the bandwagon people! Can't remember my life in the kitchen pre-Thermy! (well actually try to forget!) Wink

    Made this last night and it was a total disaster.

    The rice turned to glug, the veggies were not cooked and the fish was not steamed.

    Question's, do you leave rice in TM basket or put in bowl with liquid?

    What liquid cooks the veg and salmon after rice is removed?

    I put broccolini in with boch choy, I think this may have interferred with steam getting through the trays to salmon? Thoughts?

    Appreciate any feedback, we ended up making our own rice, steaming veg in pots and cooking fish in our frying pan. It tasked great once cooked, but 3 hours later is a little ridiculous and dissapointing. Please help :o)

    I used brown rice and should have soaked it beforehand as I had to steam it minus the Varoma for an additional 6minutes - the results were great, creamy rice and the glaze - oh my, PHENOMENAL!! Yummy meal, absolutely making again!!

    This is delicious! I haven't used the varoma much but it was very successful in cooking the fish and rice. I had to vary the ingredients a bit - didn't have fresh ginger so used bottle - same with corriander. Had used all my coconut milk the other day making hazelnut icecream so substituted coconut cream concentrate and increased the water and didn't have chilli - not a big fan actually.

    I'm sure fresh ginger and corriander would result in different flavour however, my version was still extremely tasty. I'll certainly do this again. Thanks!

    This has to be one of the best fish dishes I have ever had! The sauce had so much flavour and I could eat it on everything. Next time I will de-seed the chilli as my youngest found it a little spicy. Honestly don't think it needs the coconut rice the dish has enough flavour in its own. This ones gone to the top of the favourites list! Love
