BaCaZu Muffins

  • 60 g Walnuts or Pecans
  • 100 g raw carrot, cut into chunks
  • 100 g raw zucchini, cut into chunks
  • 2 eggs
  • 100 g vegetable oil
  • 1 banana, ripe
  • 1 level teaspoon vanilla essence
  • 150 g cup wholemeal SR flour
  • 125 g plain flour
  • 1 level teaspoon bicarbonate of soda
  • 1 heaped teaspoon ground cinnamon
  • 180 g Dark Brown Sugar

Recipe's preparation

    BaCaZu Muffins
  1. 1.     Turbo nuts  1 -2 times to desired texture. Set aside. (I don’t bother with walnuts)

    2.     Grate carrot & zucchini 3-5 secs on speed 5 until desired texture. Set aside.

    3.     Add all wet ingredients to bowl & mix 10 secs speed 7

    4.     Put dry ingredients, carrot & zucchini on top of wet ingredients

    5.     Mix approx 20  seconds speed 4 - 5 on reverse until just combined – add nuts through the top if using - do not overmix

    6.     Spoon into muffin tins / wrappers and bake 180°C approx 15 mins (depending on size) until golden and firm on the top. Can also be cooked in a ring tin approx 25 – 30 mins

    7.     When cold, ice with lemon cream cheese icing

    Thank you for the lovely recipe! I have made these on many occasions and have always worked out beautifully. I also reduce the sugar to 80g and still find them sweet enough.

    Thank you for a wonderful recipe Julie. I have given this to all my thermomix and non thermomix friends that have a gluten intolerance and they all loved it too. Also another way to get a vegie into your children.

    Very delicious.  Easy to make.  I forgot the banana the first time, so I made them again.  Each time they rose beautifully.  The only difference the second set tasted like banana!  My grand-daughter ate two in the first day - we were laughing as she simply refuses to eat vegetables in any shape and form.  I used rapdura sugar by volume and left out the nuts.  These are a winner.  Many thanks.

    I used dates instead of sugar, grapeseed oil instead of vegetable oil and flaxseed instead of eggs. So it's refined sugar free and vegan!

    I ran out of vegetable oil so I used olive oil and they tasted fantastic. I chopped the walnuts finely because my son hates the texture of nuts. These muffins are huge! Thanks so much for the recipe.

    Delicious, I substituted the brown sugar for combo of molasses and rapadura and reduced the total amount. Great way to disguise vegies for kids and everyone loves these so they're a regular treat at our place. Makes 12 generous sized muffins. Yum!

    I made mini muffins for mybtoddlersbto use up veggies. 

    Modified a little based on what I had in cupboard, eg 2 bananas, whose meal plain flour and norm self raising...

    Delicious!!
