Banana, Honey and Cinnamon Muffins

Ingredients

Muffins

  • 2 bananas
  • 120 g Milk
  • 30 g honey
  • 75 g melted butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 100 g raw sugar
  • pinch salt
  • 300g Self Raising Flour
  • 1 tsp Baking Powder (optional)
  • 2 tsp ground cinnamon

Recipe's preparation

    Muffins
  1. Put the bananas into the TM and 'mash' on speed 4 for 6 secs.

    Add in the milk, the melted butter, the honey, the vanilla extract and the eggs - mix on speed 5 for 5 secs.

  2. Weigh in the flour and sugar and add the salt, and cinnamon (and baking powder if you want to use it) and mix on speed 3 for 5 secs to combine.

    Pour the mixture into the paper cases and bake in the oven for 20 mins at 180 degrees.

    I made first batch almost as per recipe- no sugar &30gr maple syrup instead of honey.
    Second batch- tweaks as above and (like another commenter) used almond flour in place of SR flour, 2 heaped teaspoons baking powder, then stirred through some sultanas by hand. Excellent!

    Just tried these with Very ripe banana! Going by previous comments (many thanks to all) I didn't add any sugar and used almond meal - don't eat grains - added extra baking powder - probably neary 2 teaspoons! They are great - yummy indeed! Very moist too! Thank you Angela!

    Great base recipe to suit what you wish to bake! I replaced milk with greek yoghurt, reduced sugar to 70g (will go less next time), and changed honey to maple syrup! Sprinkled with walnuts before baking. Perfect! Thanks for sharing.

    Nice basic banana muffin recipe. Could easily reduce sugar and I subbed coc oil for butter. I accidentally put everything in bowl after mashing banana, so mixed 20 sec Spd 4. Could add berries or nuts and seeds

    Very nice. Also took advice to melt butter first for 1min30 60 degrees, then proceed to add bananas etc. Added a tablespoon of chia seeds and reduced sugar to 40g, still plenty sweet so would probably omit altogether next time. Made 12 large muffins.

    Great recipe. I made a few tweaks. Melted butter first  at 60deg for a 1:30sec and then added 2 quite large bananas. Subbed in maple syrup and forgot the eggs. They are fluffy, light and delish! Thank you.

    Yum! These are wonderful, I tweaked them a bit and added some things to suit my family and they turned out wonderfully. I added chocolate chips, a handful of shredded coconut and about 3 tsp of chia seeds, I also used coconut oil instead of butter and 60g of coconut sugar instead of 100g of raw sugar and I left out the vanilla as I felt that they didn't need it. Beautiful tmrc_emoticons.)

    50 % Coconut Oil and 50% Butter which I melted in the TMX after mashing the bananas.  

    Also added some Choc Chips  Big Smile  

    I made 12 x large muffins and 24 x mini muffins from one batch.

    Took on heaps of other suggestions had just made the kids raw cacao up and go's so didn't bother cleaning the bowl before making these, used half wholemeal sr and half white sr flour, replaced butter with coconut oil, used coconut sugar 80grams also added 3 tsp chia seeds as the kids love the craunchiness.  Lovely and moist.also followed the FF oven suggestion 170degrees for exactly 15 mins (thanks so much for this). My boys have devoured 4 of them already.
