Ingredients

2 eggs
250 g milk or buttermilk
Pinch salt
1 tbsp oil
120 g plain flour



Preparation

1.

Place
all ingredients into TM bowl and blend for 20-30
seconds
on speed 6.

Allow
mixture to stand for at least 20 minutes.

Heat
shallow crepe pan, butter the pan with a very small amount of butter and pour
batter into hot pan. Never pour batter into unheated pan as it will stick. Turn
over once edges start to lift.

You certainly can freeze

You certainly can freeze cooked crepes. I would seperate them with baking paper, wrap tightly with plastic wrap or foil and then freeze for no longer than 3 weeks. To thaw remove from freezer and allow to thaw at room temperature or place into oven in foil wrapping and heat through until thawed.
