  • 310 g Luke Warm Water
  • 1 sachet dry yeast, (or 1 Tbsp or 7-8g)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 510 g bakers flour
  • 30 g extra virgin olive oil
  • 1 teaspoon bread improver, (optional)

The Bestest Bread Rolls Ever

1.

Add ingredients in the order they are writtenTurn slowly to speed 6 and mix for 10 seconds


2.

Lock Lid Closed lid , Set timer to 1.5min, Knead dough mode


3.

Oil it up, roll into a ball and prove in bowl until doubled in size or at least 10minutes.


4.

Cut into 8 pieces and shape and put in cold oven 180-190C or 170C fan forced, for about 20 minutes.

(we do this so that the rolls will prove a 2nd time whilst in the oven and then they will cook once the oven gets to certain temperature)

Tip

When you take them out of the oven, the top should be slightly brown, sides will be white and top will be hard. the longer you leave it there to cool, the softer the bread will become.Remember it is flour, so if you turn the dial up to a high speed, you will get it all stuck on the lid, if you do it slowly you shouldnt have anything on the lid.

I prefer to shape my 8 rolls like small hotdog rolls. They are easier to eat.

I've already rated this recipe 5 star because of how easy they are, but I wanted to add that I've made these rolls a number of times without the bread improver, and tonight I added bread improver and it made all the difference! 

Thanks. I made about 8 so maybe that was the issue. Will try again making them smaller. Appreciate the tip.

How big are you making your rolls? I usually do 16 small bread rolls as I only use mine for soup. That might be far too small for you, if you're making them for other things. I guess you could try to adjust the size of your rolls, or even the shape?

These are the best bread rolls I've ever made. I use plain flour, rather than bakers flour, and they come out light and fluffy on the inside and nice and brown on the outside. I even froze half of the dough the last time I made them, and defrosted it on the counter. Baked just as amazing as if the dough was fresh, too.  I make mine into 16 small rolls, rather than larger hotdog-like shaped rolls. 

I cooked it for over 45 minutes and still had a "seam" of dough near the bottom of the roll that seemed undercooked. Any tips / advice on why that occurred?

so easy and quick! i took advice from jodiebro and warmed the water, ive never had success in making bread or rolls until today, they were perfect with my tuna mornay.

I'm giving these bread rolls five stars for their simplicity and quick turn around time. I've made these so many times as a side for soup. They are so quick and easy.

Love these! I warmed the water to 40 degrees then added the rest of the ingredients . Very easy and yummy!  Smile

My first ever attempt at these and came out great. I turned them into 16 cheese and bacon rolls but besides that followed your recipe to a tee! Thanks heaps

I substituted plain flour. First rise in a warm garage took 15 mins. I cooked for 5 mins longer than specified. 

Added sesame seeds to the top prior to baking using water on dough to make them adhere.

Absoultely the best bread I have ever made and I am a complete novice.  Excellent recipe.

These turned out great. The cooking time was fine for me, despite other comments, but we do have a really strong oven. Really easy and tasty.

Are you meant to cool them in the oven. I didnt u derstand the comment about the longer you leave them "there" the softer theyll be.

Cooking

This was my first successful bread recipe. I had nearly given up hope. Came across this recipe and so glad I gave it a go. I upped the cooking time to 30mins and they were PERFECT

Terrific!  Thanks for the recipe.  Mine definitely needed more cooking time and they were a bit dense.  I used bread flour - I'll use bakers flour next time and see how they come out.

We made these today! Newbie to the thermomix & never made bread before. They were really good. We had to cook longer & they were a bit more dense than shop made bread rolls, but I would definately make them again. Thanks for sharing.

First time making bread these are awesome ! Except I think the cooking time for me could have been a little longer slightly doughy but still really yummy and super easy! 

I have used the mix to make whole loaves before. Looks awesome sprinkled with seeds but brush the top of the loaf with a dash of water first so they stick! I Usually make a couple of rolls too because the mix is too much for my bread tin. Surprisingly the loaf cooks in 25-30 minutes like the rolls.

This has now been my go-to bread recipe every week, all year.

Hubby's favourite variation is adding a couple of heaped tablespoons of LSA (linseed, soy,almond meal) and wheat germ before kneading. But I also use sesame,poppy, pepitas, buckwheat or whatever else is in the cupboard. WINNER!

Yes they are very good. Soft and delicious.

[not sure what i done wrong but mine were very heavy and not fluffy at all. The dough looked lovely and it had more then doubled in size. i had to cook them abit longer as 20 min wasnt enough they were still very raw when 20min was up. Will try again tomorrow

Did u end up working out where u went wrong. I made some tonight and had the same problem

Made these last week, and by far the best recipe I've come by for soft bread rolls. Has anyone tried making one big loaf with the dough? How long did you cook it for? TIA

These were by far the best rolls I have ever made. They were so easy to make and turned out beautifully.I divided the dough into 12 small buns and put cheese on half for lunchboxes. I will definitely be making them again.

very simple and soft! i proved mine In the microwave with a cup of boiliNg water for about 30 minutes. Thank you so much. I'll try it topped with cheese next time like the others suggested.

Yay for a fast delicious bread recipe. Needed more time in my oven. Topped a couple with grated cheese and another with grated cheese and black olives. Will add bacon next time! Awesome lunchbox snack, the kids loved it.
