  • 310 g Luke Warm Water
  • 1 sachet dry yeast, (or 1 Tbsp or 7-8g)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 510 g bakers flour
  • 30 g extra virgin olive oil
  • 1 teaspoon bread improver, (optional)

1.

Add ingredients in the order they are writtenTurn slowly to speed 6 and mix for 10 seconds


2.

Lock Lid Closed lid , Set timer to 1.5min, Knead dough mode


3.

Oil it up, roll into a ball and prove in bowl until doubled in size or at least 10minutes.


4.

Cut into 8 pieces and shape and put in cold oven 180-190C or 170C fan forced, for about 20 minutes.

(we do this so that the rolls will prove a 2nd time whilst in the oven and then they will cook once the oven gets to certain temperature)

Tip

When you take them out of the oven, the top should be slightly brown, sides will be white and top will be hard. the longer you leave it there to cool, the softer the bread will become.Remember it is flour, so if you turn the dial up to a high speed, you will get it all stuck on the lid, if you do it slowly you shouldnt have anything on the lid.

I prefer to shape my 8 rolls like small hotdog rolls. They are easier to eat.

Terrific!  Thanks for the recipe.  Mine definitely needed more cooking time and they were a bit dense.  I used bread flour - I'll use bakers flour next time and see how they come out.

We made these today! Newbie to the thermomix & never made bread before. They were really good. We had to cook longer & they were a bit more dense than shop made bread rolls, but I would definately make them again. Thanks for sharing.

First time making bread these are awesome ! Except I think the cooking time for me could have been a little longer slightly doughy but still really yummy and super easy! 

I have used the mix to make whole loaves before. Looks awesome sprinkled with seeds but brush the top of the loaf with a dash of water first so they stick! I Usually make a couple of rolls too because the mix is too much for my bread tin. Surprisingly the loaf cooks in 25-30 minutes like the rolls.

This has now been my go-to bread recipe every week, all year.

Hubby's favourite variation is adding a couple of heaped tablespoons of LSA (linseed, soy,almond meal) and wheat germ before kneading. But I also use sesame,poppy, pepitas, buckwheat or whatever else is in the cupboard. WINNER!

Yes they are very good. Soft and delicious.

[not sure what i done wrong but mine were very heavy and not fluffy at all. The dough looked lovely and it had more then doubled in size. i had to cook them abit longer as 20 min wasnt enough they were still very raw when 20min was up. Will try again tomorrow

Did u end up working out where u went wrong. I made some tonight and had the same problem

Made these last week, and by far the best recipe I've come by for soft bread rolls. Has anyone tried making one big loaf with the dough? How long did you cook it for? TIA

These were by far the best rolls I have ever made. They were so easy to make and turned out beautifully.I divided the dough into 12 small buns and put cheese on half for lunchboxes. I will definitely be making them again.

very simple and soft! i proved mine In the microwave with a cup of boiliNg water for about 30 minutes. Thank you so much. I'll try it topped with cheese next time like the others suggested.

Yay for a fast delicious bread recipe. Needed more time in my oven. Topped a couple with grated cheese and another with grated cheese and black olives. Will add bacon next time! Awesome lunchbox snack, the kids loved it.

Finally a recipe that works...  I have tried so many fresh bread roll recipes which were all epic fails.  I was just about to give up and then tried this one.  worked a treat, I could have bought these rolls from a bakery.  Pretty please with myself..  Had them with a beautiful slow cooked beef stew..  PERFECT.  thank you  Tongue

These rolls are the best..... Cooking I never had any luck with other recipes I would always get hard rolls that went to waste, I have made these a few times now and they are always like brought ones ... thank you for a great recipe that works everytime Smile

These bread rolls worked a treat!  Delicious for lunch still warm.  I also added egg wash to the tops and poppy seeds on a couple of them, and sesame seeds on others.  Going to make another batch now.  Thank you.

Great recipie. Worked well thanks. I used them for hamburger rolls with eggwhite wash on top and sesame seeds. I proved the dough 3 times so they were nice and fluffy.  Smile. I also usually activate the dry yeast by leaving it in the luke warm water for 10minutes before mixing in the rest of the ingredients.

Lovely soft rolls.   I topped them with ham and cheese and they were delicious.   Very easy recipe and great if you are short on time with the second proof being done in the oven.  Definitely my new favorite roll recipe.

Mine were really quite heavy and not fluffy at all . Not sure what I did wrong but will use the remainder for bread crumbs I think. I wouldn't make these again
