Broccoli Nuggets

Ingredients
Broccoli Nuggets200 grams Cheddar cheese
450 grams broccoli
1/2 brown onion
1 clove garlic
120 grams breadcrumbs
2 large eggs
20 grams olive oil
1 tablespoon chia seeds (optional)
Preparation
1.
Place cheese into bowl and grate on speed 8 for 8 seconds. Set aside.
Place 600g hot water into bowl, and then place broccoli into varoma dish on top. (I like to use part broccoli and part cauliflower). Cook for 28 minutes on varoma temp on speed 4. Set aside to cool slightly.
Place onion and garlic into bowl and dice for 3 seconds on speed 7. Push onion down from the sides with a spatula, then add olive oil and saute for 3 minutes, varoma temperature, on speed 1.
Add cooked broccoli into bowl and finely chop on speed 4 for 3 seconds.
Add breadcrumbs, chia seeds, eggs, and cheese and combine on
on speed 4 for 20 seconds or until combined.
Place bowl in fridge and allow mixture to cool for about 15 minutes.
Oil a large baking tray with baking paper and pre-heat oven to 180c.
Take large tablespoons full of mixture, roll into a ball, flatten and place on tray.
Bake for 15 minutes, turn nuggets over and bake for a further 15 minutes or until golden brown on each side.
Tip
These are the only way I can get my 2 year old to eat broccoli and cauliflower. She loves them!
Would also be a great finger food when starting solids as it is soft enough for littlies to gum on.

Great, easy and very tasty! My toddler loved
My super fussy 6 year old
My super fussy 6 year old loved these. It helped that he helped make them so was keen to try them rather than reluctant as he usually is. We all loved them also. They will be on regular rotation at our place now. I also used cauli as well as broccoli. I love the fact that they are baked and not fried, it offsets some of the fat from the cheese.
Hi KCP, Children won't like
Hi KCP, Children won't like everything at once;but this doens't mean you shouldn't persist. It takes about 21 tries to 'like' a food and vegetables etc should continually be offered with mum and dad demonstrating that they are yummy. Watch the language used around foods (yummy, treat, fattening etc - we're talking longterm here). You are the adult setting the agenda.Good luck

Unfortunately kids (4 & 2 y/o) wouldn't eat them but hubby and I thought they were nice. My kids must be fussier than most so won't bother making again given I only made them for the kids to eat some vegies.

You have a point there - cheese is not "good" for you, but it is also not "bad" for you either. Research on toddlers and eating has shown firstly that toddlers are fussy and can be very difficult to feed causing stress for parents, which in turns makes toddlers even more fussy and even present with food refusal. The research also indicates that the factor that limits a child's later food preferences is actually the fact that they are not exposed to many different foods consistently over the toddler years. With that in mind, using cheese (or any other food for that matter) as a buffer to introducing foods that have been previously rejected means that you are keeping those food in the child's repertoire and can later offer them with less cheese, in a different form or with no cheese at all. I think it would work with other vegies. I think the key is to make sure they're finely chopped well cooked. Maybe just play around with more or less eggs and breadcrumbs as needed

Has anyone tried this recipe adding other vegies? Sweet potato, carrot etc? I wonder if it would make a lot of difference to the consistency or anything critical like that...

Yep, these freeze well. You could either defrost at room temp or zap in the microwave. Great to have in the freezer on standby when the fussy toddler refuses to eat anything else!
