Cauliflower & Leek Soup

Ingredients

4 portion(s)

  • 1 leek, White section only, roughly chopped
  • 1 tablespoon oil/butter for greasing
  • 400 grams cauliflower, roughly chopped
  • 1 turnip (or swede), peeled and quartered
  • 2 tablespoons TM vegetable stock concentrate
  • 500 grams water
  • dash paprika, optional
  • Salt & Pepper optional, to taste

Recipe's preparation

  1. Chop Leek for 4 seconds on speed 5 and scrape down sides

    Add oil/butter and cook 2 minutes, 100 C on Speed 1. While that's cooking, I prepare the turnip and cauliflower.

    Weigh in the turnip and cauliflower. Measurements can be approximate. Chop for 5 seconds on Speed 5-6


    Add stock and water, cook 20 minutes, 100 C, speed 1.

    Add paprika, salt & pepper as required and turn the dial slowly up to blend for 1 minute on speed 10.






    Note: I have made this without the turnip and it needed the addition of cream at the end. With the turnip, it has a beautiful creamy consistency.









    This is also nice served with a bit of parmesan cheese.






    My stock paste is made with reduced salt from EDC recipe so if yours is full salt, you may want to reduce the quantity of stock, and definitely don't add anymore salt to it.

    I added a little more cauliflower but otherwise used all the same amounts of ingredients and could not eat it as it was so bitter. Didn't improve with garlic so unfortunately had to throw it away.

    Delicious healthy soup! I made this with 2 turnips, a half of a sweet potato and some butternut pumpkin and added 3 tablespoons of cooking cream (as I wasn't sure if it was going to be creamy enough - although I think it would be fine with or without this).

    I made this without the turnip and it was deleicious. I added nutritional yeast (being a vegetarian) which gave it some extra umph! I like my soup a little chuncky so it was perfect. Making it again this week, adding red lentils this time.

    Amazing soup! I added a clove of garlic at the beginning and substituted turnip for potato. next time, I'll try putting in more cauliflower as I think there was room in the thermite for a larger quantity.

    I found this soup a little bit salty so I would omit the salt at the end and probably a bit less stock. Apart from that it was beautiful, one of the best soups I've had and the kids all loved it too. We didn't have turnip so used a potato instead (unpeeled).

    Great soup for the kids. They call it cheese soup! I add garlic and 120 grams of red lentils to give the soup a bit of thickness. I have made this soup with the suede and/or turnip. Serve with a sprinkle of Parmesan and it goes down a treat with the kids. Thanks for posting.

    Delicious, I used my chicken broth instead of water and added the vege stock as listed.  Added Parmesan which was a great addition.  Served with some crispy bits of baked ham shavings.  used up the lonely swede I had in the fridge from my vege box in it. Satisfying weekend lunch.

    Thank you for posting this soup - AMAZING -  very creamy and tasty.  Complete meal for me!!! No salt needed as my TM stock is always salty enough for me and I only use half the salt recommeded when making it, no problems with it keeping as it is used up very quickly especially in winter.

    So creamy and delicious. I'll reduce the stock next time thought as it was a touch salty for me, but hubby loved it. I guess it would depend on the salt content of the vege stock you have.
