Ingredients

Chicken and Sweet Corn soup
1 fillet chicken cut into strips
1 piece ginger fresh 2.5 cm
1 onion, peeled & halved
20 grams olive oil
420 gram Can creamed corn
420 gram Can corn kernels
1 teaspoon sesame oil
1 heaped tablespoon vegetable stock concentrate
1200 grams water
4 level tablespoons cornflour
4 level tablespoons water
2 egg whites Slightly whisked


Preparation

Chicken and Sweet Corn Soup

1.

Add onion and ginger to TM bowl, chop 3 seconds, speed 7.
Add oil, sauté 2 minutes, 100 deg, speed 1.
Add both corns, water, sesame oil, stock and chicken. Cook 15 minutes, 100 deg, reverse, speed 1.
In the last 2 minutes of cooking add mixed cornflour and water through the lid. Then add the slightly whisked egg whites.
Serve.

We love this recipe! Hubby recently suggested shredding the chicken instead of having chunks so I followed the recipe as far as ingredients go except for adding a little soy sauce (thanks for the suggestion rochelleb) as well as some garlic and chop it with the onion and ginger. After sauteing the onion, ginger and garlic I add all of the other ingredients (except water) and put the chicken into the basket, then I fill it up to 2 litres (I just guess where the 2L mark is becasue you can't see it when the basket is in!) Then cook for the same amount of time. After after 10 minutes I could see that it wasn't really bubbling up top so I bumped it up to Varoma temp for the last 5 minutes to ensure the chicken was cooked through! Just thought I would share! Happy cooking everyone!

Lovely soup and a winner with my little ones (one of which is very fussy!).

I left out the egg whites and the soup turned out fine.

This is so yummy! Made this tonight for dinner and the kids couldn't get enough. I used 500g chicken thigh fillets diced and was very yum. Also added a tablespoon of soy sauce for a bit more asian flavour. Could also use spring onions instead of a brown onion. Will be making this again!

Amazingly easy and tasty. Used 1000ml of water but also added about 100gm of shredded bacon. Had visitors for lunch and ended up with comments from all.

This is a favorite in my house.  I really, really dislike raw chicken, so we buy bbq chickens and I freeze 300 gm portions to use in various recipes, so I just use one of my frozen chicken packets in this when we make it, and just add it near the end.  The only thing I change, other than the chicken, is that I use less water than the recipe calls for.  I add all the other ingredients, and then just fill with water to the max line.  Works like a charm!  Smile Love

I have made this soup a couple of times now - I think it is going to become a favourite!  So easy to make and delicious.  I used frozen corn and 'creamed' the required amount in Thermie first and then the second time I just 'creamed' it after sauteing the onion.  Yes, I too couldn't fit the amount of water stated however just filled the bowl to the maxium point AFTER ADDING ALL OTHER INGREDIENTS!  Very important to add all ingredients first before overloading on the water (maybe I did this and maybe I didn't......!).

I loved this soup. Very authentic flavours.  I  added an extra chicken fillet, used fresh instead of tinned corn and couldn't fit in all the water the recipe asked for.  I also added in some sliced spring onions in the last few minutes.  Delish!!

I made this soup tonight and though the end result was not too bad I do want to make a few comments. Like the previous entry, there is an issue with the amount of water stated in this recipe. I was only able to fit half the amount of water in, 600ml and then the max was reached. I made sure to have drained the corn kernels so there wasn't any extra water from that either. Also, one fillet of chicken is not much for this soup, I'd put in more chicken to really make it a Chicken Sweet Corn soup. Lastly, the whisked egg whites just made the soup a bit 'messy, had to cook the soup for a little longer to make sure it mixed well, I'd leave the eggs next time.' 

Overall, not a too bad recipe, but updating it is necessary.
