Chicken & Coconut sweet potatoe mash & steamed asian greens

  • 500 grams sweet potato, cut into large chunks
  • 50 grams coconut cream
  • 500 grams chicken breast, cut into large strips
  • 1 bunch asian greens / bok choy, leaves separated
  • 800 grams water

garlic, ginger soy dressing

  • 1 clove garlic
  • 2 centimetres ginger fresh, peeled
  • 100 grams soy sauce
  • 1 --- handful fresh coriander
  • 1 red chilli, optional

Recipe's preparation

    chicken & sweet potatoe
  1. Place basket inside ™ bowl & fill with sweet potato, fill ™ bowl with water, place chicken pieces & any remaining sweet potatoe into Varoma tray. Put lid on & place VAroma on top of ™ bowl. Cook on Varoma Speed 4 for 25 mins. Place chicken into a dish & cover with foil. Empty hot water from ™ bowl carefully. Place sweet potatoe & coconut milk into ™ bowl & blend for 1 min speed 6 100 degrees. Place sweet potatoe mash into thermoserver.

     

     

  2. Clean ™ bowl. Place garlic , ginger, coriander  & chilli into ™ bowl , chop speed 10 for 5 secs. Add soy sauce on top. Place basket in ™ bowl on top of sauce, fill with asian greens. Cook all together for 5 mins  Varoma temp speed 3.

     

  3. Prepare 2 plates with bed of sweet potato/coconut mash, place asian greens on top , then a serving of chicken pieces & drizzle hot soy sauce dressing on top

    Yuuuum! Was delicious and looked very gourmet in presentation! We all loved it, including our toddler. The only problem was, I stupidly didn't read that the recipe was only for 2 serves, so we ended up with little portions! Haha  Big Smile

    My husband said this was his favorite thermomix recipe I had ever whipped up! I was amazed considering he doesn't usually even eat sweet potatoe! I used bok choy as my Asian greens. It was so easy and so tasty!

I was a bit worried if the kids would like this, but they did, I will need to double for next time as not quiet enough.  I also cooked some rice as knew kids wouldn't really like the sweet potato. I changed a little and put the chicken into the jug to keep warm and put it on reverse speed to keep warm and it separated the chicken a bit more and coated with the sauce. Enjoyed all round. Big Smile

    I found this recipe in the forums Recipe section - Chicken with Coconut Sweet Potato Mash, with Asian Greens and soy ginger sauce.Having only received my Thermomix yesterday I followed the recipe basically to the letter, however I did not have any fresh coriander so I used lemongrass instead.This was a beautifully delicious, healthy dish and the instructions were easy to follow..

    Sorry I have only cooked it for two so far. I'm sure you could cook more but might need to do it in stages seperately, by cooking more sweet potatoe in varoma & putting aside. Then the chicken & then more veg in basket & varoma depending on how much you would need . It is YUMMY & so easy to do !!
