Chicken & Pumpkin Salad with Chickpeas

Ingredients

4 portion(s)

  • 500 g water
  • 500 g cubed chicken breast, seasoned with mixed herbs
  • 300 g cubed pumpkin
  • 150 g red capsicum roughly chopped
  • 100 g zucchini roughly chopped
  • 1 can Chickpeas
  • 100 g baby spinach
  • 100 g slivered almonds or pine nuts
  • 100 g craisans
  • 50 g extra virgin olive oil
  • 50 g lemon juice
  • 50 g pomegranate molasses
  • murray river sea salt flakes
  • cracked black pepper

Recipe's preparation

    Salad
  1. Add olive oil, lemon juice and Pomegranate molasses to bowl and

    season with pink sea salt and cracked pepper and mix on speed 3 for 5

    seconds. Set aside. 

    Fill bowl with 500grams of water

    Insert Lid

    Insert Varoma 

    Add cubed chicken breast

    Add cubed pumpkin on top of chicken

    Add red capsicum roughly chopped on top of pumpkin

    Set 23 minutes, varoma temperature, speed 3

    With 10 minutes remaining, stir chicken to ensure evenly cooked, add one

    roughly chopped zucchini on top of chicken/veg and continue steaming


    Meanwhile:

    Drain and wash a tin of organic chick peas

    Add them to a large bowl with 2 handfuls of baby spinach with the craisans

    and slivered almonds or pine nuts 

    When steamed add chicken and veggies to your bowl with the chickpeas etc and pour over dressing, mix and serve.

    Wow!! I think I’ve just found my favourite saladLoveLoveSo beautiful.....I also used maple syrup in the dressing and my vegetables and chicken needed extra cooking time. Feta and toasted walnuts would also make a nice addition. Thanks for sharing a delicious recipe.

    Hi hlmckinfo. I always ensure that there are a few holes uncovered in the bottom of the varoma to allow maximum steam through and I give it a really good stir after about 10 minutes to ensure even cooking. Be sure not to overload it also. Hope thse tips help  tmrc_emoticons.) and as always.. happy cooking!

  • Do you put the vegetables in

    Do you put the vegetables in the upper tray of the varoma? When I put them on top of the chicken, the chicken didn't cook through. Even after the full 23 minutes, the chicken chunks are still visibly raw.

    I've separated out most of the veg and am cooking the chicken for another 15 minutes. I always seem to struggle with the varoma!

    Loved this salad. Used maple syrup as I had no pomegranate molasses and was really lovely.

    Will be amazing I would imagine with the  pomegranate molasses.

    It was DELICIOUS! I couldn't get the pomegranate molasses at the time, so I used pomegranate juice instead. I think it would have been too sweet for my taste with the molasses anyway...

    This was really Yummy, I added stock to my bowl and some Quinoa to the rice basket and cooked that at the same time. just took it out after 15 mins so it wasnt over cooked. IT WAS GREAT.

    This was delicious!  I couldn't find any pomegrante molasses in the local shops so I used some honey and balsamic vinegar as a substitute and added some feta I had sitting in the fridge to the salad. 

    Will def make again, not only did hubby and I enjoy it but a rare event took place in our house -for once, my vegetarian child didn't pick the meat out to leave on her plate and my carnivore son actually ate the salad!!  Amazing, thank you for sharing.
