  • 1 onion
  • 1 garlic clove
  • 40g oilve oil
  • 4 Roma tomatoes, chopped
  • 8 sun dried tomatoes
  • 20 basil leaves, fresh
  • 400g chicken breast, chopped
  • 125ml dry white wine
  • 1 Tbs veggie stock concentrate
  • 600g water
  • 300g arborio rice
  • 1/3 C Grated Parmesan Cheese
  • 2 Tbs Philly Cream Cheese

Recipe's preparation

    Chicken, Tomato and Basil Risotto
  1. Place onion and garlic in TM bowl and chop for 5-7 seconds on speed 7

  2. Add 40g oil, saute 2 minutes, 100 degrees on speed 1

  3. Add Roma tomatoes, sundried tomatoes and basil, chop for 3 seconds on speed 7

  4. Add 400g chopped chicken, cook for 2 minutes at 100 degrees on reverse speed 1-2 Counter-clockwise operation

  5.  Add 125ml wine, 600g water, 1 Tbs Veggie Stock Concentrate and 300g arborio rice

     

     

  6. Cook for 17 minutes at 100 degrees on Reverse speed 1-2 Counter-clockwise operation

  7. Place in Thermoserve and stir through 1/3 cup grated parmesan cheese and 2 Tbs of Philly cream cheese. Let sit for 5 minutes.

    made this tonight (well Mr 4 did with my help) and it certainly was a winner. used tinned tomatoes instead of Roma as the price of tomatoes these days are ridiculous. used more cream cheese than I was supposed to and it turned out delicious. This is now one of out faves.

    This is my sons favourite "Cheesy Rice" recipe and so simple to make. Every time I make I usually do more this or less that and it still ends up perfect. Definitely one recipe you can use what's left in your crisper if needed.

    I left out the sun dried tomatoes as I dont like them and also added 2 tablespoons of the vegetable stock like others have done. I also reduced the amount of water by 150ml. Was nice and creamy. Will definitely make again. Thank you.

    I have made this a few times and the whole family really enjoyed it, including my husband who does not like risotto (soggy rice).

    Added 2 tbls of vegetable paste like suggested. Instead of sun dried tomatoes, I added a tablespoon of sun dried tomato pesto I had in the fridge. Plus I had about 160mls of wine left in the bottle so put less water in.


    Yum. Thank you! This will be a regular in our house.

    This is really yum. Perfect consistency and nice and creamy. I used a can of diced tomatoes instead of fresh tomatoes and it came out perfectly. I could take or leave the sundried tomatoes, made it quite herby, might try without them next time.

    Really yummy ☺ Didn't have sundried tomatoes so used roasted capsicum instead. Also added some zucchini and spinach to increase vegie content. Found it to have too much liquid so decreased. Also added more stock like others said. But still yummy and have added to favorites.

    very nice risotto...I added extra stock as in the other comments and I also added bacon aa 400g was an awkward amount of chicken (more than 1 but less than 2 breasts). Next time I'm also going to add baby spinach leaves just before serving.

    For some reason this ended up very watery for me not sure what I did wrong? Otherwise the flavours were nice and leftovers the following night were perfect cause all the juices had soaked into the rice. My 3 yr old asked for seconds which she never does so that's a winner for me!

    I have made this a few times now and we love it. I suggest putting the thermo basket on instead of the mc in the last 10 mins of cooking or so as it splatters a lot otherwise.

    I used ham cut into strips, instead of chicken.  When added 2secs, speed 7.
