Ingredients

Chicken, Tomato and Basil Risotto
1 onion
1 garlic clove
40g oilve oil
4 Roma tomatoes, chopped
8 sun dried tomatoes
20 basil leaves, fresh
400g chicken breast, chopped
125ml dry white wine
1 Tbs veggie stock concentrate
600g water
300g arborio rice
1/3 C grated parmesan cheese
2 Tbs Philly cream cheese


Preparation

Chicken, Tomato and Basil Risotto

1.

Place onion and garlic in TM bowl and chop for 5-7 seconds on speed 7

2.

Add 40g oil, saute 2 minutes, 100 degrees on speed 1

3.

Add Roma tomatoes, sundried tomatoes and basil, chop for 3 seconds on speed 7

4.

Add 400g chopped chicken, cook for 2 minutes at 100 degrees on reverse speed 1-2 counter-clockwise operation

5.

 Add 125ml wine, 600g water, 1 Tbs Veggie Stock Concentrate and 300g arborio rice

 

 

6.

Cook for 17 minutes at 100 degrees on Reverse speed 1-2 counter-clockwise operation

7.

Place in Thermoserve and stir through 1/3 cup grated parmesan cheese and 2 Tbs of Philly cream cheese. Let sit for 5 minutes.

Did you end up halving the

Did you end up halving the ingredients?  There are only 2 in my household and this would be way too much.  If you so, did you adjust the cooking times etc adjusted?

Great flavours, excellent risotto consistency at the end, just had to watch for any overflow during the last cooking step.  Makes enough for 4 with leftovers in our family - perfect

Great recipe, we really enjoyed it. Will definately be making it again. I agree with the comment re the stock, I will add more stock next time to see if the flavour pops a bit more. Thanks for sharing this great recipe!

Laughing out loud very tasty and perfect risotto. My 2nd day with the TM and successful dinner done! Maybe should have halved the ingredients.
