Choc-Chip Fudge Slice

Ingredients

24 portion(s)

  • 120 grams Butter
  • 240 grams brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 2 tablespoons cocoa powder
  • 160 grams self-raising flour
  • 40 grams Desiccated Coconut
  • 130 grams Dark Choc Bits
  • Icing Sugar to decorate

Recipe's preparation

  1. Line a 18cm x 28cm rectangular slice pan with baking paper.

    2.  Pre-heat oven to 180C.

    3.  Place butter into mixing bowl and melt 3 min/80C/speed 1.

    4.  Add the brown sugar, egg and vanilla essence and combine 10 sec/speed 3.

    5.  Add the cocoa and combine 10 sec/speed 3. Scrape down sides of bowl with spatula.

    6.  Add the flour, coconut and Choc Bits and mix 35 sec/Counter-clockwise operation/speed 2.

    7.  Spread evenly over base of pan.

    8.  Cook for about 20 minutes or until lightly browned.  Remove and cool in the pan.  Refrigerate for about 1 hour, or until just firm.

    9.  Remove fudge from pan and cut into squares. Dust with sifted icing sugar and serve.

    very yummy. i wouldnt call it fudge id call it a brownie though. I made a double batch and reduced the sugar by 100 gms in total. still very sweet but yummy. fell apart when i placed into a plastic container but nonetheless will still get eaten. thanks

    This was so yummy and so quick (apart from the cooling in the fridge for an hour! -patience, patience!!) and easy! I reduced the amount of brown sugar to 180gms and it was still sweet enough and I used some white and some milk choc chips because I had no dark left.

     

    I love a recipe when i have all the ingredients in the pantry! Thanks for converting! tmrc_emoticons.)

    Thanks for this recipe... A sticky mix to work with but cooked beautifully and tasted delicious! Mine didn't look quite as high as the pic (they did initially then sunk a bit once out of the oven) but it was all gone too quickly to worry about presentation!!! Thank you again.
