Ingredients

12 slice(s)

  • 30 g Butter
  • 4 Weetbix (approx 55 g)
  • 150 g brown sugar
  • 1 egg
  • 2 tablespoons cocoa
  • 150 gself raising flour
  • 40 g coconut

Recipe's preparation

  1. Weigh in butter and melt for 1 minute 30 sec at 80C, speed 1

    Add Weetbix and crush on Speed 5-6 for 3-5 seconds

    Add remaining ingredients and mix for 20 seconds on Speed 6 (stop and scrape down at 15 seconds if not coming together)

    Press into lamington tray or square cake pan lined with baking paper (or even better, a silicone one doesn’t need lining!) and bake at 170C for 15 mins

    Very disappointed in this slice. Dry and crumbly and rather bland. Not sure if the recipe has been varied in an attempt to make it a more healthy option by minimizing the butter but it has definitely missed the mark.

    This is a fabulous recipe. I have tried other weetbix slice recipes but this will be the one I turn to from now on. It was so quick to make and it has less butter than I've previously used. I used 120g of brown sugar but I may even try just 100g next time. Yum. Thank you for sharing.

    GREAT slice recipe thanks! Made for school morning tea and kids and adults loved it!  Especially liked the lower butter content. I iced mine too and put sprinkles on top.

    I tried this weet-bix slice because I have a version that I have been cooking for years, that has 125g butter and no egg. I was therefore keen to try this much healthier version. It turned out well, and have just tested on the kids, and they give it the big thumbs up! I will be using this recipe from now on and will throw my old one away!!
