Chorizo and Capsicum Risotto

Chorizo and Capsicum Risotto

  • 4 cloves garlic clove
  • 1 --- small onion, quartered
  • 2 red capsicum roasted and then quartered
  • --- small handful of parsley
  • 2 chorizo sausages
  • 200 grams Tin Italian diced tomatoes
  • Half teaspoon sugar
  • 150 grams Aborio Rice
  • 300 --- mls water
  • 1 tablespoon TM stock concentrate
  • 120 grams sliced mushrooms
  • to taste salt and pepper to taste
  • teaspoon quater teaspoon of paprika

Recipe's preparation

  1. Preparation:

    Step 1 - Roast Capsicum's in Oven for 30 minutes at 180-200c and then place in bowl and cover with glad wrap until skins are coming off. Remove Skins and seeds and then add in Step 5.

    Step 2 - Chop up Chorizo Sausages into small pieces.
    Step 3 - Add 15 g olive oil to jug, heat for 2 minutes, varoma temperature, speed 1, MC on.
    Step 4 - Add the chorizo meat to jug, and cook for 8-12 minutes until cooked, varoma temp., speed 1.  MC cap on.
    Once cooked, drain the sausage meat (will resemble mince) and remove to a seperate bowl.
    Step 5 - Add quartered onion, garlic, parsley, and quartered capsicums. Chop 10 seconds, speed 4.  
    Step 6 - Add 20g olive oil.  Cook 6 minutes, varoma temp.,   counterclock  speed 1, MC off.
    Step 7 - Add tomatoes, sugar, smoked paprika, salt & pepper, aborio rice, water and stock.
    Cook for 13 minutes, 100c,  counterclock speed 1.  MC cap out, and basket on top of lid.
    Step 8 - Add in mushrooms & drained chorizo meat, and cook an extra 5 minutes, 100c,  counterclock speed 1.
    Step 9 - Pour Risotto in thermoserve and let rest for 5 minutes before serving.

    Made this tonight and was DEEE licious!!!  I used a jar of chargrilled capsicums instead of oven roasted ones as I was short on time and omitted the sugar.  Would prob add an extra 200g tomatoes and 200 of water and more rice to make MORE for leftover lunches!!

    it is devine, gluten free, dairy free and delicious- but it is totally dependant on the quality of the chorizo!  find the best there is and enjoy! everyone loved it but I did serve it with parmesan cheese-m

    I found this was much nicer the day after. When I had it yesterday (when I cooked it) I found it was just sweet and tomatoey, but lacked body and I was a little disappointed. Today when I had it for lunch, it was delicious! It may have been the chorizo I used, as I've never cooked with it before so just got the stuff from the deli section of my local supermarket. Some chopped fresh chilli in this would also be delicious.

    So without it was amazing too! 

    I also added a little chilli and would add some pan fried haloumi cubed at the end.

    I think some people might be taking this forum a bit too seriously?! All recipes are in essence a variation of something else, somewhere else. Its not like the idea of combining chorizo and rice has never been done before, you can't "own" or "invent" that concept!

     

    Its a nice recipe, we all get to enjoy it being on here. I would be totally happy for someone to put one of my recipes on another forum so all could enjoy it. Credited or otherwise.

    Hi Maddy, This recipe was the BEST recipe I have had from Thermomix, I wanted to share it with everyone as I couldnt find it on this forum? Definitely didnt want to take credit at all, you did an awesome job creating this recipe!!!! my partner who isn't liking alot I cook from the thermomix said this was the best risotto he has ever eaten so thank you very much tmrc_emoticons.)
