Custardy Apple Cake

  • 2 eggs
  • 220 grams caster sugar
  • 125 grams Butter, melted
  • 1 teaspoon vanilla extract
  • 75 grams Self Raising Flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 125 grams Milk
  • 4 Apples (Pink Lady or Granny Smith), Cored & Thinly Sliced

Recipe's preparation

  1. 1. Prehea oven to 180. Grease a 22cm round cake tin and line the base with baking paper.

    2. Beat eggs for 30 senconds on speed 7.

    3. Add Caster Sugar and continue on speed 7 for 2 minutes or until the batter becomes thick.

    4. Stir through the melted butter & vanilla for 20 seconds speed 2.

    5. Add the flour, cinnamon, salt and milk. Stir through for 30 seconds speed 2.

    6. Add the apples to the batter and stir through Counter-clockwise operation speed 1 making sure all the apples have been coated in the batter.

    The batter will be quite runny.

    7. Pour into the cake tin and bake for 1 hour or until golden brown and coming slightly away from the sides of the pan. The cake is cooked when a skewer insterted into the centre comes out clean. Cool in the tin for 10 minutes before carefully turning out onto a wire rack, Dust with icing sugar and serve with thick cream or however you like.

    This is one of my favourite dessert/cakes. The same recipe is in Julie Goodwin's Heart of Home cookbook. Great to see it written for thermomix.I use the butterfly when beating eggs and adding butter - so I reduce the speed to just below 4, and do it for a little longer. The thermomix also makes mixing the apple through the batter easier (and less washing up 😊) - I do ensure that it is on reverse when doing this so that the apple isn't cut further.I keep the apple in chunky dice (potato salad sized cubes), and my family prefer it this way rather than finely sliced.Brilliant recipe that is sure to impress!

    Further to my last comment, Gluten free self raising flour works well so it is also suitable for celiacs. I also had issues with springform pan leaking the first time I made this, and now always cook in a standard cake tin.

    I have this cake baking now, but next time will definitely try Natvia or similar sweetener as posted in earlier comments.

    This is so delicious! have made this many times. And looks impressive too. I prefer to use Granny Smith apples and I slice them THICKLY. I like how they still have a slight fresh taste to them (not overcooked).
    I always line my springform tin with baking paper so that it doesn't leak.
    I cook it low in the oven, on 160C FANBAKE, and it forms a bit of a crust on the bottom, which is extra nice!
    It works fine too, when I replace the sugar with 180g Natvia (or Erythritol and Stevia), for a low sugar alternative.

    Absolutely loved it. I halved the sugar and it was perfect.
    Next time I will sit my springform tin on a tray as some of the mixture dripped onto the bottom of my oven.

    Absolutely delicious but not a cake! I used 4 large golden delicious apples and barely fitted the mix in the tin. Substituted half brown sugar and cut it down to 200g. Served hot with cream. Will try again with less butter!

    Amazing! I reduced the sugar & butter to 200g & 100g like suggested & it was perfect. I diced my apples also. Very impressed but I admit I didn't think it would work when I saw how runny it was. Wouldn't work in my springform tin. Can't wait to make it again

    Should also be called an apple pie cake. Absolutely delicious! I heated the eggs and sugar to 37°C before adding the melted butter and had no issue with a spliting mixture. I didn't feel guilty eating this with all the apple 🤣so it's definitely a keeper, thank you.

    I can't remember if I have left a comment on here but I thought it would be worthwhile doing it again because this is the most amazing cake I have ever eaten! It's not your typical cake but being a huge custard lover this is right up my alley!

    Everyone needs to try this cake, as long as you don't expect a traditional style cake, you won't be dissapointed!

    Unusual texture, but very tasty!

    As other commenters have noted, this recipe produces a very dense, crumbly, moist 'cake' that reminded me of dense souffle with a very buttery (see 'wet and shiny') base. It was beautifully custardy, appley, and cinnamony, though, and went well with extra custard! A lovely dessert for winter, but not very cakey - more like pudding. Next time, I'll reduce the amount of butter, as we had to blot it off the base with paper towel. Perhaps next time, we'll split it into individual ramekins, as moving it from baking tin to cooling rack to serving plate was...messy. I don't recommend using a bundt tin!

    To clear up some confusion from previous posts if you cook this expecting a traditional cake you may well be confused by the result - it is actually a clafouti/clafoutis - hence the texture!

    As far as the result went it was a hit with my family served warm with cream - the more traditional way of eating such a dessert.  tmrc_emoticons.-)

    First attempt split so I did have butter oozing at base even though like others I had reduced quantity.  Taste lovely although stodgy with limited rise.    I will attempt again as there are so many amazing results with this recipe.   I would like to get the 'cake' result though.  It should be lovely.

    so yummy! Absolutely perfect, I think next time I'll cut the apple pieces up smaller. Kids didn't like the look of it but happily came back for 2nds and 3rds. Was fantastic hot with ice cream.

    i used a slice tin and cooked for 30 mins and it was perfect. 

    highly recommend, quick easy and really yummy.

    I have a son who is coeliac so replaced the flour with a gluten free option. It did seem to take longer to cook as it was difficult to tell when it was cooked. Served it warm with cream and was delicious.

    If I could give this 10 stars I would. I reduced sugar to 150g as I was using gala apples. Was a little difficult to tell if it was cooked as the bottom is a little gooey. My family thought this was at the top of the list of good things to come out of the TM. Wasn't that big so would definitely double the recipe if having as a dessert for a special dinner.  Would cut down on butter next time as it seeped out of the tin.

    This cake tasted delicious and was completely demolished in one sitting, despite being somewhat undercooked and not looking its best. I have had a request to cook the cake again on Anzac Day and would like to know whether the temperature is for a fan-forced oven or not. Thank you.

    A little concerned as the power went out for awhile while in oven. It still seamed to turn out great and tasted yummy. Will cut back on butter next time as it seeped out but that could of been  becauce of power cut! Will definitely be making again!

    I had high expectations after the comments and ratings, and was a little worried when I poured my 'mixture' into the tin as it seemed like it was all apples with a bit of batter covering it! (Which is not bad because it seemed quite healthy!)

    But it was just AMAZING!! I think it'll by one of my all time fav Thermomix cakes tmrc_emoticons.) Thanks so much for the recipe!
