- 1 bunch parsley, fresh
- 150 grams cheddar or tasty cheese (roughly cut)
- 1 onion
- 200 grams Diced bacon
- 320 grams Self Raising Flour
- 2 eggs
- 260 grams Milk
- 20 gram butter or oil

Recipe's preparation
Method
Place parsley in TM bowl 2-3 seconds on speed 7. Set aside in bowl.
Place 130-150 grams of tasty cheese in TM bowl for 4 seconds on speed 8. Place in bowl with parsley.
Place onion in TM and chop for 5 seconds on speed 7.
Add diced bacon and oil and cook for 4 minutes at 100⁰C on speed 1.
Add all remaining ingredients into TM bowl for 2 minutes on Reverse + speed 1.
Spoon into normal muffin pan makes 24 or mini muffin pans for little fingers and lunch box treats.
Bake at 180C for approx 15 mins.
Notes:
Other varieties can be done by grating zucchini and mushrooms for a vegetarian version

Yummy!!!! I used ham instead of bacon as that's what I had, blitzed the parsley with the cheese because I'm lazy and added 1/4 zucchini that I blitzed with the onion. These were so tasty and easy!

I added garlic, salt, pepper and a dash of paprika. I found I had to mix mine for a fraction longer but as with all muffins careful not to over mix. Smell lovely will be great for brunch

These muffins are AMAZING. I make 2 batches every weekend- one to freeze, one to keep fresh. Perfect for breakfast. I add zucchini with the onion and an extra 50g of bacon and they're perfect. Delicious out of the oven, or cold or heated up.

I thought I would review since the milk amount has been updated. These are delicious. My kids aren't onion fans so I used just one spring onion. At the end I did have to hand stir to combine the cheese in. First batch out of oven. Making mini muffins and think it will probably make 21! Great for freezing for my Miss 5' lunches. A whole months worth!

These were very nice. The
These were very nice. The Thermie didn't mix them well though (as i find it often doesn't). So i just finished off and mixed by hand with the spatula - easy and only took half a minute. I stuck to the recipe and they were truly nice.

Sorry but this recipe just did not work for me. The TM did not mix it, and the muffins took forever to cook, were a bit leaden though tasty. May be the cook was the problem, maybe the recipe!

I just ramped up the speed to about 8 for 20 or so seconds and it mixed it up ok. As I sai, I'll see ow it goes.

I have just put these in the oven but was a bit confused by the last step. All that flour and milk and eggs and only mixing on reverse for 2 mins at speed one. Nothing happened. I was in a mad rush (school lunches) and just went ahead w recipe. Lesson learnt. But they not cooked yet, so interested to see how they go.

I had a look at some of the other muffin recipes here and 250g (1 cup) milk seems to be about normal for 320g flour depending on the egg size as well. I would try 3/4 cup of milk with large eggs and add a bit more milk if too thick. I hope this helps - Anne

So disappointed. I cooked
So disappointed. I cooked these muffins for close to an hour and they were still sloppy. Does anyone make or check these recipes before they are added? What a waste of time and ingredients and I'm still hungry with nothing for lunch
