Easy Peasy Cupcakes & Buttercream Icing

Ingredients

Cupcakes

  • 110 grams softened butter
  • 75 grams raw sugar, ground to caster sugar
  • 120 grams Self Raising Flour
  • 2 eggs

Buttercream Icing

  • 150 grams Butter, Room Temperature
  • 300 grams raw sugar, Ground to Icing sugar
  • 1.5 tablespoons Milk

Recipe's preparation

    Cupcakes
  1. Pre heat oven 180 degrees .Grind raw sugar for 5 secs speed 10. Add all other ingredients & blend 2mins speed 4. Divide into cupcake cases & bake for around 15 mins.

     

  2. Grind sugar for 20 secs speed 10 scrape down sides & repeat. Add butter & milk, blend speed 8 20 secs.

    Pipe or spread buttercream onto cupcakes. Can add additional decoration to suit occassion.

    Cake was beautful. Icing was nice, but not fantastic - tasted very buttery because it isn't whipped very long. Still it's quick & easy to make and everyone enjoyed them.

    this recipe was easy to follow, and helped me produce the easiest yummiest cupcake. My little girl who is 2 in two days was at me and at me for cupcakes and this was a breeze... I can say say my Thermi that often sits dormant will now be a tab hand at these cupcakes and often tmrc_emoticons.)

    I have just made the icing component and it was fantastic to work with - also tastes great. The colour was a little odd, but nothing that a few drops of food colouring and sprinkles couldn't fix!

    So I'm babysitting my friends Thermomix while she is in the US, I did a massive baking marrathon yesterday for my son's party, I used the chocolate cake recipe in the EDC book and it was so much qucik than my standard recipe so I decided to go on the hunt for a buttercream recipe as my normal one is quite invovled too, my first indicator that this is not a recipe for buttercream (more like a buttery icing) is that there is no whiping the butter, buttercream buy it's very nature is whipped butter not mixed butter, this is not buttercream and I'm a little disapointed with the results and wasted ingredients, it's a nice icing but next time I'll stick with my bench top mixer.

  • I just baked 2 double batches

    I just baked 2 double batches to make 30 Muffin sized cakes...I did find them a tad oily when taking them out of the baking tray though, the patty cake wrappers had that greasy clear look about them...so maybe too much butter?? Did anyone else did this?

    I'm yet to make the icing....

    Super easy to make!

    I doubled the recipe to get 12 muffin sized cupcakes.  I dropped the sugar to 100g (for double batch) and added 40g milk to thin out the batter a bit.

    Yum!!

    Great recipe thanks! Made them gluten free by just substituting the flour for gluten free self raising and added a dash of vanilla extract. Yum!!

    Made these last night and absolutely love them. It made 12 small cupcakes, and i only made up half the buttercream and topped them with sprinkles.Rosie, my 10 year old found this recipe here for us to christen our new oven!
