ThermoGourmand Easy Sticky Date Pudding

Sticky Date Pudding

  • 210 g date, pitted, raw
  • 260 g Boiling water
  • 1 tsp Bi-carb soda
  • 50 g brown sugar
  • 60 g Butter, cubed
  • 2 eggs
  • 140 g self-raising flour

Caramel Sauce

  • 140 g brown sugar
  • 100 g Butter, cubed
  • 250 g thickened cream
  • 2 tsp vanilla essence
  • 6

Recipe's preparation

    Sticky Date Pudding
  1. 1. Preheat oven to 180C. Grease 20cm square tin or a muffin tray.
    Or, prepare silicone cups or dariole moulds in the Varoma.
    2. Combine dates, boiling water and bi-carb soda in Thermomix bowl. Let stand for 5 minutes.
    3. Add brown sugar and cubed butter to mixture and process 10 sec/speed 6 until dates are chopped.
    4. Scrape down and add self raising flour, then lightly beaten eggs and and process 5 sec/sp 4.
    5. Scrape down and process again 3 sec/sp 4.
    5. Pour into prepared tin, large muffin cups (Makes 9 large muffins) or silicone cup cake liners.
    6. Bake for 15 - 17 minutes in a moderate oven for muffins and 20 - 25 for larger tin.
    7. Stand for 5 minutes before turning out.
    Alternatively, place 500g water into Thermomix bowl and place Varoma on top with lid in place. Place moulds into bowl and steam 20 - 25 min/Varoma/Sp 2, depending on size of moulds.
    8. Stand 5 minutes before turning out onto serving plates.
    9. Top with caramel sauce and whipped cream.
  2. Caramel Sauce
  3. 1. Place brown sugar, butter, thickened cream and vanilla into TM bowl.
    2. Cook 2min/80/sp 1 until butter has melted.
    3. Cook a further 8 min/Varoma/sp 2.
    Sauce will thicken on standing.

    Alternatively, if you have a TM6, you could try the Cookidoo Caramel Sauce as it uses the high heat mode.

Tip

Try this with Rapadura sugar for a lovely butterscotch flavour.

For a more dense, but higher fibre pudding, use wholemeal self raising flour.

For an adult flavour, add 2 Tbsp Bourbon to the Caramel Sauce.

    I didn't have eggs so left them out and still delicious. Also reduces the sugar to about half as the sauce is sweet. This is such a simple recipe and to make it easier, I 2/3 of the way filled small espresso cups and microwaved for 30 seconds. No oven necessary.

    No fail, works every time. I use the varoma, 22 minutes for 4 large muffins, speed 2. 18 minutes, normal muffin silicone tray. I use a different sauce that I have no idea where I got it from, a salted caramel sauce. I freeze these individually, they thaw beautifully. Thank you for sharing this recipe.

    Of course, you can also steam these in the Varoma which I have done many times. I love the silicone cups from the Mix Shop.

    They take about 20 minutes or so, simply test with a skewer.

    I use this recipe ALL the time. The only change I make is mixing everything on reverse Counter-clockwise operation because I like having larger chunks of dates throughout the mixture. Smile

    We pop the carame sauce in a glass bottle/jar for easy reheating in the following days. Remove lid, heat it up, replace lid, shake it up- bam! Ready for the pudding or ice cream or both. 😊

    *Never skip the bicarb addition and make sure your baking powder is in date. As unique as "date custard slice" is... the sticky date pudding is much better.

    I think you probably took them out of the oven too early. All ovens are different and times given are only approximate. Next time, pop a thin skewer in to check if they're cooked through. If it comes out clean, you're good to go! If not, give an extra few minutes.

    OMG this recipe is fabulous!! Thanks so much for the recipe! I made it gluten and egg free due to dietry requirements and they tasted non GF or EF!!! Hubby and daughter (who are both non gf) couldn't tell the difference between the two (I made both GF and non GF Sticky Date).

    Absolute hit with the family. I blitzed the dates for longer so that my kids couldn't detect them and cooked the sauce for 12 mins. I used a mini loaf pan which yielded 8 super light and fluffy puddings.

    Love these!! Made these in 6 ramekins for afternoon tea and they were delicious! So easy and fast!


    Also only used 50g sugar for the puddings and there were perfect.

    Cooking time was about 22 mins for the ramekins and I extended the cooking time for the sauce by 5 minutes to have a thicker sauce.

    Everyone thoroughly enjoyed them. Thanks for the fabulous recipe!

    Beautiful sticky date and so easy, have made many times. 50g sugar in the cake is plenty as the sauce is very sweet. I need to cut my dates in half though to check for rogue pips prior to cooking them as a retained pip adds bitterness. Make as cupcakes so leftovers can go into lunchboxes (just brush a bit of the sauce over the top with pastry brush so not so messy). Love this recipe.
