- 2 tablespoons chia seeds
- 7 tablespoons warm water
- 300 grams wholemeal flour
- 300 grams bakers flour
- 10 grams Yeast
- 300 grams warm water
- 2 teaspoons bread improver
- 1 teaspoon sugar
- 1 teaspoon salt
- 30 grams olive oil
Recipe's preparation
1.
Put chia seeds in bowl and combine with tablespoons of water to create gel. Leave for 5 mins.
2. Place water, yeast and sugar into mixing bowl and heat 1 min /37C/speed 1.
3. Add flour, salt, bread improver, and oil and mix on speed 6 for 10 seconds. "Closed lid"
4. Scrape down bowl and add chia seed mix. Mix on speed 6 "Closed lid" for 6 seconds. Knead for 6 minutes. "Dough mode"
5. Leave dough in mixing bowl until it rises up pushing the MC out through the MC hole (this takes about 45 min). "Closed lid"6. After the dough has risen, turn the knead function on for 30 seconds to knock out the air in the dough (this can also be punched down by hand out of mixing bowl)."Dough mode"
7. Put dough in oiled loaf tin and wipe water over the top with your hands. Leave to rise above the top of tin (takes about 15-20 mins).
8. Once risen, put into a cold oven and set temperature to 200C. Bake for 35 minutes (inclusive of warm up time).
9. Take loaf out of tin and return to oven for a few minutes to make outside of loaf crunchy.

Tip
Add a couple of tablespoons of linseeds just before the kneading step for an Omega-3 hit (it also tastes great and makes the bread look a bit more fancy!)

Rather than leaving out the chia seeds, you could try milling them first. I did this, and my very fussy little ones couldn't detect them!

This recipe is fantastic. It worked first go and was delicious. It worked well for both sandwiches and toast. I left out the chia seeds and 7 tbsp water but followed the recipe otherwise. The rising times were spot on. The cooking time in my oven was about 6 minutes less and I didn't need to put it back in to make it golden either. Thanks for the terrific recipe.

Mine was quite sticky, too - much too sticky to form by hand, so I just plopped it into the tin and the result was perfect. Sometimes, the sticky doughs produces very moist bread.

This was such a simple recipe to follow for bread. I made it with the chia with exact amounts in the recipe & even though it was sticky it worked perfect. My kids didn't want to try it because of the chia so next time I will leave them out.

At last! I have tried a few ‘best bread ever’...
At last! I have tried a few ‘best bread ever’ recipes, at last one that is more like sandwich bread. The others were ok to toast, but not for sandwiches... I made it firstly into baguettes, which turned out perfectly & used for garlic bread & now made a loaf which is a good size loaf. I only used 210g of water because of the water used in the chia seeds. Definitely a keeper! Happy little vegemite 😁

For those who think the dough is too sticky, you can make adjustments to the amount of water. When I don't have chia seeds I just skip Step 1. When I am using chia seeds, I follow the recipe except I only add 210g water instead of 300g (the 7 tablespoons of water is about 90g from memory). I've made it like this every couple of days for more than 2 years and it is perfect every time, easy to work with and gets rave reviews! I add a bit of rye flour sometimes (100g) instead of the wholemeal.

Family favourite. My kids think this bread, fresh out of the oven, with homemade jam, is as good as any dessert! Great crumb, and lovely crust if you put it back in for a few mins as stated. I usually have a small dish of water in the bottom of the oven to help it crisp up. Thanks so much for a gorgeous, failsafe recipe.

This is my daily bread mix! I found that when using the chia seed and wTer mix, I had to lessen the main water amount. Now I don't add the cjia seeds as hubby States he isn't a bird, and the 300g water works perfect!

If your dough is too sticky wet your hands first - it stops the dough sticking to you.

Really enjoy this bread. I've only had my thermomix a few days and have already made this one twice. The only thing I find slightly annoying is its so sticky, almost to the point that its too sticky to handle unless I take it out and roll it around on a floured surface. Is it meant to be that way? I know its not a huge issue but was just wondering. Will continue making

Best ever recipe. I have tried a few bread recipes and this one gave me the best result first time. For the second rise I have been putting it into the oven that has been heated to 60 degrees then turned off and have sat the tin (large tin for 900gm loaf) on top of the thermoserve filled with hot water. Works beautifully every time. I have made this loaf everyday this week as the kids keep eating it all. Have also added 60gm of seeds to the recipe for a variation
