Goats Cheese

Ingredients

100 g

  • 1 litre goat's milk
  • 3 tablespoons lemon juice
  • 3/4 teaspoon salt
  • 1 teaspoon olive oil

Recipe's preparation

  1. Heat Milk 15 minutes/90C/speed2

  2. Add lemon juice. Gently stir a few times with the spatula.

  3. Let it sit for 3 minutes then pour into the cloth sitting in the Simmering Basket

  4. Let it drain for 1 minute then wrap up the cloth and gently squeeze out some of the liquid with the spatula. Let it continue to drain for up to 1 hour. Moist is creamy, dry is crumbly.

  5. Mix with salt in a bowl and press into a small ramekin.

  6. Top with Olive Oil and chill.

Tip

You can mix chopped herbs like basil or sage or spice it up with some pepper or chilli.

If you are having a party or jus can't get enogh goat's cheese then just double the quantities, but use the same times.

Serve with buscuits or spread on toast instead of butter. You can also add some to a salad, pasta dish or when making pizza.

Yum!!!  And don't the kids love it ... I mean the children.

    My first time making cheese and I love it! I came across this recipe after buying 1lt of Paul's goat milk on clearance for $2! Had no idea what to do with it but knew I wanted to try something. I don't enjoy the taste of the milk, but found the cheese lovelt and mild. I only used a pinch of salt and it was perfect.

    Wondering... Does anyone have a use for their leftover whey? I'm sure it's got to be good for something! Also any idea how long the cheese/whey would keep?

    Excellent! I only realised after I started cooking that I didn't have a cloth to use, so I used a tea towel instead. I had to drain it overnight but it still turned out well. I only used half the salt and it was salty enough for me. Next time I would add more lemon.

    Enjoying making this cheese, I leave it for 5 min or more and strain it for about 5 min to make it spreadable on biscuits with 1/4 teaspoon of salt. Delicious. 1ltre makes just over 200g this way. Thank you for the recipe

    Thanks for this lovely easy recipe. I bought two 1l cartons at 50 cents each on mark down. Made two lovely very cheap cheeses, one salted, one with fresh chives and garlic! Yum!

    TIP. Depending on permeability of draining cloth, do not drain longer than 1 minute before checking moistness.

    Keep drained whey to adjust moisture.

    This is super easy.  Mine turned out more like a ricotta cheese, maybe drained too long.  It also doesn't have the 'tang' that are with commercial cheeses....would adding more lemon provide this??

    Looking forward to trying my next batch with some herbs.

    I have used this recipe several times with great success.This time, I tried doubling the recipe; it worked well to stay to the same time as per instructions for 1 L. Draining took only about 1 minute. I suppose the cloth one uses determines the time.

    I reduced salt to  2.5 ml salt per 1L and used no oil on top. Instead, small containers covered with cling wrap works well to  freeze for later use.

  • Great recipe. 1L of milk

    Great recipe. 1L of milk yielded 130g which I was pretty happy with. Also noted the price of the milk after reading previous comments. Paul's Goats milk is $4.80 a Litre so pretty happy to get that much fresh goats cheese for $4.80 and a little effort. Also, my chux wasn't terribly soiled and after putting it through the wash with the tea-towels, it's prefectly fine.  Only leasson learned is that I used 1/2 a tsp of salt and it was a bit too salty... I guess it all depends what kind of salt you use.  Also, once I drizzled olive oil ontop, it made it a little milder.thank you for sharing a great simple recipe tmrc_emoticons.)

    Delicious and easy to make! I did not have a chux or muslin cloth, so used a double layered, very fine, laundry bag instead.

    The whey should not be discarded as it is quite healthy. I poured mine back into my goat's milk bottle to use in porridge, smoothies and baking.

    I buy fresh goats milk from Safeway at $4 dollars something a litre and long-life goats milk for about the same.  I wash out the muslin by hand twice and dry between washes so any remaining cheese can be shaken out before the second wash.  I also pour boiling water over it before each use.  Sounds like a bit of a fiddle, but really only a quick wash.  You can also use Chux cloths for straining which would be cheaper if you want to throw them out.  I love being able to make my own, and I'm sure it works out cheaper than buying it.

    I would love to replicate the commercial goats cheese so was happy to discover this recipe.

    it worked (If you don't have or don't like the lemon - you can use vinegar.)

    it does taste very goat like - a lot stronger that most I have tried... so I am not sure if you can dull it down with cows? 

    Personally I quite like it tmrc_emoticons.)

    my goats milk was $7 for the litre and then a dollar or less for the muslin.

    The one litre produced half a cup of cheese. I threw out the muslin as I felt it  was not ever going to be clean enough to use again.

    so great recipe but unless I can half the cost of my milk...I probably won't bother making it again.

    Really easy and delicious. However my fetta had a distinctive lemon taste which was nice on a salad but didn't suit the other meals I used it in. Any suggestions? Should I wash the cheese to get rid of the lemon flavour or could you use some vinegar instead of lemon juice? Thank you.

    I made it crumbly to put on top of pizzas tonight, but now I want to go up to the shops and get sme more goats milk to make a spread with herbs in it.
