Ingredients
Butter2 cloves garlic
1 bunch mixed herbs, fresh optional
5/600 g fresh cream chilled, not thickened, minimum fat content 35%
500 g cold water
Bread
450 g lukewarm water
750 g bakers flour
1.5 tsp salt
4 tsp Yeast
Preparation
1.
Place garlic and herbs into mixing bowl chop for 3 sec/speed 7. Set aside.
Insert Butterfly. Place cream into mixing bowl and beat for 1-3 min/speed 4 to separate*.
Once separated, strain buttermilk through the basket carefully. Remove Butterfly.
Place water into mixing bowl with separated butter and mix for 5-10 sec/speed 4.
Strain liquid again through basket and squeeze solids with your hand to extract all remaning liquid.
Once butter is ready, add garlic and herbs and mix for 30 sec/speed 4.
*The separating process takes between 1 and 3 minutes depending on the freshness of the cream.

Pre-heat oven to 180°C.
Place all ingredients into mixing bowl and mix for 5 sec/speed 7 to combine.
With dial set to
, knead for 2 min
Let dough rise for 30 minutes or until doubled in size.
Roll onto ThermoMat into large rectangle and spread herb butter over dough.
If necessary, sprinkle dough with flour first to prevent butter from sliding off.
With a butter knife, cut 3-4cm wide strips. Fold each dough strip in a concertina pattern and place cut side up in a 26cm springform tin until all the strips are pressed in together.
Bake for approximately 40-45 minutes. Serve hot.

Thanks for a terrific recipe. I love that the dough quantity is more than the standard dough recipes around for pizza/bread. I actually tried this dough recipe to make mini pizzas to freeze for lunches and this is the best dough recipe yet that we have used - lovely soft dough texture as a pizza base. Thanks again will be using this a lot!

I added a little more garlic
I added a little more garlic for our own taste. It is delicious, soft and a definite keeper

Don't want to make the butter from scratch, but how do you know how much butter to use??

This was soooooo yummy and will be making it all the time. Changes I made: I used plain flour as that's all i had in my cupboard and turned out perfect, added grated cheese and parmesean, and added more garlic. I didn't make the butter from scratch as I couldn't be bothered. I just used normal softened butter

ok this may be a silly
ok this may be a silly question, but all the cream I seem to notice in the supermarket is thickened cream (with full cream or light variations), am I just not seeing the fresh cream that's not thickened?

Delicious! I agree with everyone else about extra garlic. I sprinkled the butter with fresh Parmesan & then a little extra on top. This gave it a nice crunchy top, the whole family loved it.

yum yum yum. I used spelt flour, added 2 extra cloves of garlic and also some parmesan cheese. Very easy to make and will now become a staple in our house.

Great recipe! The dough was fantastic and soft. I didn't make my own butter. I just used ready made shop bought butter, mixed dried herbs, cheese and ALOT more garlic. I also put more cheese on top once assembled...... Mmmmmmmmm.... Will try mixing up another filling next time

LOVE this recipe, have made it several times now and have mixed up the fillings also. Pizza filling is gorgeous, and my kids love it. Great dough, also works great for a scroll dough. Thanks for sharing!
This was fairly easy to make
This was fairly easy to make and tasty too. Next time though I think I'll add a little more garlic as by the time it'd cooked the butter had melted out and most of the garlic flavour had gone with it. And I may take the lazy option of using bought butter rather than making it just to save some time. Was very good though and will definitely do it again
