  • 1000 g red skinned potatoes
  • 150 g diced bacon
  • 2 spring onions, sliced
  • 20 g olive oil
  • 60 g parmesan, shaved
  • 6 eggs
  • 500 g water
Dressing

  • 200 g mayonnaise
  • 15 g wholegrain mustard
  • 10 g balsamic vinegar

Recipe's Preparation

1.

Add bacon, oil and spring onion (keep a little for garnish) to bowl. I like to slice my spring onion as I like how it looks in the dish, but you could chop this on speed 4 for a few seconds if you prefer 


2.

Cook 100c, counter-clockwise operationspeed 1 for 3 minutes. Transfer this to your salad serving dish and set aside. No need to wash the bowl



3.

Add 500g water to the bowl. Put diced potatoes in the Varoma dish (no tray) and steam for 15 minutes, varoma temp, speed 2


4.

Insert basket into bowl, add the 6 eggs and replace lid and varoma with potatoes in. Cook for a further 14 minutes, varoma temp, speed 2. Check potatoes are cooked. They should be not too cooked that they fall apart, but not too firm either. A knife should pass through them easily but not mash them. Leave potatoes in the varoma and set aside with the lid underneath to catch any drips and cool down while you prepare the rest of the salad

Remove basket with your spatula. Put eggs into a sink or bowl of cold water to cool down as you peel them. Quarter and slice eggs. Empty steaming water from bowl and dry. 


6.

Add dressing ingredients and mix on speed 3 for 5 seconds. Pour potatoes into your salad bowl (on top of bacon & onion mixture). Add eggs and shaved parmesan (keep a little for garnish) on top. Pour dressing from bowl over the salad and mix dressing through until combined. 


7.

Top with some spare spring onion or fresh chives and some of the shaved parmesan. Refridgerate until cool and serve

Yummy and easy!

Hi,

I'm pregnant too, good news is that you can have store brought Mayo (ie. Supermarket), you just can't have home made Mayo as it has raw egg in it. 

Just wondering has anyone tried with sour cream - I'm pregnant so can't have Mayo.  

Will try anyhow and see how its goes!

I love this! Was a hit with the family too. It's all in the dressing I think! I swap out the bacon for mushrooms for a vegetarian option and add chopped cherry tomatoes for extra colour. I also leave out the cheese for a dairy-free option & have left out the eggs for the vegans! You can't go wrong with this one!

Perfect tasting recipe! Wow'd everyone at our bbq with this. I only needed about 20mins for the potatoes to be cooked - maybe I cut them in smaller pieces. But was delicious and leftovers taste just as good the following day. Thanks for sharing Smile

Do yourself a favour & make this dish.  YUM!!!!!!!  I have mad my fare share of potato salads but wilth similar ingredients but I think the vinegar in the Mayo is they key.

Definitely a favourite.  Used some tartare mayo and sour cream as I did not have enough mayo it turned out a treat. I also used small chat potatoes not red skin potatoes. Cooking

Thanks for this recipe! What a hit! The dressing is delicious! My family aren't really fussed with salad so I halved the portions and it still made enough to fill the thermoserver! However, I should have made the full amount because now apparently my lot all LOVE potato salad! Hope you don't mind but I've shared it on my page as recipe #364 in my quest to reach #1000 Smile

Made 9/11/14  YUMMY!!  I left out the parmesan cheese as the boys don't like it and added celery and parsley when it was finished.  Will definately be making this again.

Have the potatoes in the varoma! Does everyone make their own mayo  or use generic? I know Ming own mayo would be ten times tastier!

made this a few weeks ago when invited to a BBQ was a bit nervous as had not cooked eggs in the thermomix yet - was amazing, perfect and delicious! Can tell why people say I love your potato salad!

So I had my sons 1st birthday party two weeks ago, 17,  1 year olds and under and 40 adults I basically had everything made by my thermo and lots of toddler food from the toddler book, I made two batches the night before of your potato salad and everyone raved about all the salads but one guest must have come up three times and said he LOVED your potato salad in particular and in his opinion was the best potato salad he had ever had. His wife saw me the next day and said he had raved about it all the way home! he also said it was the hero dish of the party! I have to agree.

This is my favourite salad to make. So delicious and I always get nice comments. I've found I can use whatever potatoes I have on hand which means I usually have all the ingredients without a special shop.

Delicious! First time I made it the potatoes were a bit too firm, but then next time I made sure I cooked them a few minutes longer and it was soooo good! Smile

Wow I just made this for guests coming over tonight. Not sure there will be any left by then, it is amazing! I made it with the EDC mayo, absolutely delicious!

My family love this version, it's almost identical to how I use to make mine in the past, only never thought to add Mustard to the Mayo :)  I just dijon mustard as that's what we have at home, and don't add the vinegar... LOVE IT....
