  • 1000 g red skinned potatoes
  • 150 g diced bacon
  • 2 spring onions, sliced
  • 20 g olive oil
  • 60 g parmesan, shaved
  • 6 eggs
  • 500 g water
Dressing

  • 200 g mayonnaise
  • 15 g wholegrain mustard
  • 10 g balsamic vinegar

Recipe's Preparation

1.

Add bacon, oil and spring onion (keep a little for garnish) to bowl. I like to slice my spring onion as I like how it looks in the dish, but you could chop this on speed 4 for a few seconds if you prefer 


2.

Cook 100c, counter-clockwise operationspeed 1 for 3 minutes. Transfer this to your salad serving dish and set aside. No need to wash the bowl



3.

Add 500g water to the bowl. Put diced potatoes in the Varoma dish (no tray) and steam for 15 minutes, varoma temp, speed 2


4.

Insert basket into bowl, add the 6 eggs and replace lid and varoma with potatoes in. Cook for a further 14 minutes, varoma temp, speed 2. Check potatoes are cooked. They should be not too cooked that they fall apart, but not too firm either. A knife should pass through them easily but not mash them. Leave potatoes in the varoma and set aside with the lid underneath to catch any drips and cool down while you prepare the rest of the salad

Remove basket with your spatula. Put eggs into a sink or bowl of cold water to cool down as you peel them. Quarter and slice eggs. Empty steaming water from bowl and dry. 


6.

Add dressing ingredients and mix on speed 3 for 5 seconds. Pour potatoes into your salad bowl (on top of bacon & onion mixture). Add eggs and shaved parmesan (keep a little for garnish) on top. Pour dressing from bowl over the salad and mix dressing through until combined. 


7.

Top with some spare spring onion or fresh chives and some of the shaved parmesan. Refridgerate until cool and serve

So delicious and easy. My potatoes were a little hard so next time i will add a few more minutes to the steaming time. Also, I only used 2 eggs as I am not a real fan but they were good. Next time I will up it to 4.

Potato Salad was never something I could ever master to my liking but now i jump at the chance to make this salad. Even my husband bragged to people about it being the best potato salad....thats a huge compliment!

This was enjoyed by all.  I usually hate peeling boiled eggs, but doing them in the Thermo I found so easy to peel.

Easy and delicious - thanks!  Substitued some sweet potato in for a bit of variety. I prefer the bacon cooked in the frypan though to make it crispy.

I had 2 leftover cooked salmon fillets to use up. I warmed them in the last 5 mins of the cooking time then flaked them into the rest of the salad. Yum

Made this again tonight! Huge hit! But this time I had no bacon so I substituted it for ham, and I also only had 500g of white potato's so I substituted it for Sweet Potato, and the family loved it! Thanks so much for sharing such a lovely recipe

Very good, traditional recipe. I use small Chat potatoes, never peel them, I cut into quarters which saves extra time and I normally do it the day before a gathering so it's fully chilled.  I like to add corn & peas for extra colour Wink YUM!!.  Everyone compliments me on this recipe!!

This recipe is really yummy. Next time I'll cut my potatoes into bigger cubes though as they were slightly overdone. This would be really good with tomatoes added too.

I know I must be the only one, but wasn't fussed on this recipe, nor was hubby...Sorry!! Made it for Christmas lunch as everyone was raving about it! All the ingredients are what I would normally put in a potato salad, bacon, eggs, parmesan etc, the only difference is the dressing. Sooo disappointed  Sad
