Make syrup first by melting sugar in a small, heavy-based pan without stirring until amber in colour. Add hot water carefully as it will splatter. Add pandan leaves and stir until all caramel is dissolved and boil gently for 5 mins. Cool and remove pandan leaves.

100 g white sugar

2-3 pandan leaves, cut into 3cm strips
500 g sugar

To make kaya, place eggs, sugar and coconut milk into TM bowl and mix for 2 minutes on speed 3.
3. Towards end of the 2 minutes, add caramel syrup through hole in lid. Strain mixture and return to TM bowl.
4. Insert Butterfly and cook for 20–25 minutes at Varoma temperature on speed 3 until thickened.
5. Turn off heat and continue to mix for 5–10 minutes on speed 3.
