Lamb Biryani

Ingredients

4 portion(s)

  • 30 g sunflower oil
  • 500 g lamb fillets, cut into 2cm cubes
  • 2 onions, peeled and quartered
  • 20 fresh curry leaves
  • 70 g korma curry paste
  • 200 g basmati rice
  • 750 g water
  • 3 tbsp vegetable stock concentrate
  • 2 tbsp currants
  • coriander leaves, to garnish
  • mango chutney and pappadams to serve

Recipe's preparation

    Lamb Biryani
  1. Place 20g sunflower oil and lamb fillets into mixing bow and cook 5 min/100C/Counter-clockwise operation/speed 1.  Transfer to Thermoserver to keep warm. 

    2.  Add onions and roughly chop 2 sec/speed 5

    3.  Add curry leaves and remaining sunflower oil and cook 4 min/100 C/speed 1.

    4.  Add paste and cook 1 min/100C/speed 1

    5.  Add rice and mix 30 sec/100C/Counter-clockwise operation/speed 1

    6.  Add water, stock concentrate and currants and cook 5 min/100C/Counter-clockwise operation/speed 1

    7.  Lower heat.  Cook further 12 min/90C/Counter-clockwise operation/speed 1.

    8.  Pour over lamb in Thermoserver and gently mix in with spatula. 

    9  Garnish with coriander and serve with mango chutney and pappadums.

Tip

Just as delicious using Balti paste.

    My husband loved this one, except for the currants which I thought it helped to even out the flavours. I served mine with some greek yoghurt. It was a bit to salty for my liking, not sure if it was from the curry leaves or the Korma paste? Will make again, might just play around with the ingredients to tackle the salty issue.

  • We had this for dinner

    We had this for dinner tonight.  My youngest ate it no problems.  The oldest complained it was spicy - but ate three servings.  And my middle child threw a tantrum about eating it... but then ate it anyway.  One of those nights, but the biryani was a winner.

     

    Husband commented several times how delicious it was.
