Lemon Delicious
- 4 egg whites
- 235 grams raw sugar
- 1 --- rind of one lemon
- 150 grams Butter, unsalted
- 80 grams lemon juice
- 120 grams Self Raising Flour
- 375 grams Milk
- 4 --- egg yolks
- icing sugar, icing sugar to sprinkle over after baking

Recipe's preparation
Pre-heat oven to 180oC
Grease six 1 cup-capacity oven proof dishes
Large baking dish
Insert Butterfly into TM bowl, place 4 egg whites in bowl and beat for 1 - 1.30 mins/37o/speed 4, with MC off until soft peaks form. Set aside
Wash and dry TM bowl then add sugar and lemon rind and mill for 10 sec/speed 9. Set aside
Add butter to TM bowl and melt 2 mins/50o/speed 2.
Add all ingredients, except whipped egg whites, blend for 5-10 sec/speed 4.
Add half whipped egg whites to mixture and fold in on speed 4 then gradually fold in remainder of egg whites with help of spatula, this may take 40 - 60 seconds.
Divide mixture into prepared dishes. Place dishes in a large baking dish and pour boiling water into dish until halfway up sides of smaller dishes.
Bake for 25-30 minutes or until golden and just set. Dust with icing sugar.

Delicious and perfectly formed! I find the whites beat just fine in the thermomix, but I did add the butterfly again to blend them in at the end at a lower speed.

I used limes, halved the recipe, left the sugar and peel in the bowl while I melted the butter, (doubling the time )and cooked it in a small pyrex mixing bowl...don't know yet how successful all the changes have been!

Nice winter comfort food..... first time doing eggs in the thermy and I thought I'd nailed it, until I went to add the whites and half of them were raw and had seeped during the 'setting aside' phase. Seems I'll just have to keep practising! Oh and because I'm lazy, I melted the butter in the microwave to save emptying a bowl - oops!

Thermomix just makes whipping
Thermomix just makes whipping up a dessert so easy. Delicious after our sunday roast, kids gave it the big tick of approval, as do I. I disagree about the egg whites. The key to egg whites is a clean dry bowl and they have worked perfectly for me every time.

Made this for dessert with limes instead of lemons and it was lime-a-licious! My egg whites must not have been whipped enough because there seemed to be some un whipped while they were sitting and I was doing the next steps... Not to worry.. Still all turned out

Lovely recipe! I agreed with Tiny and beat the egg white the old fashion way only because it was quicker. Not too sweet either. I made it in individual ramekins for a dinner party and it made ten x 2/3 cup ramekins. Quite adequate for a lovely little dessert with ice cream.

Despite my love of all things Thermo, I still think the old fashioned hand held electric beater is the only way to create serious egg white fluff.
