- 1 medium brown onion
- 250 gram Cider Vinegar
- 375 gram raw sugar
- 150 gram piece fresh root ginger
- 1/2 tbsp salt
- 1 tsp yellow mustard seeds

- 1 tsp chilli flakes, dried
- 1/2 tsp curry powder
- 1/2 tsp Ground Cummin Powder
- 1/2 tsp ground cloves

Recipe's preparation
Peel and stone mangoes approx 2 fresh, add to TM with onion and peeled ginger, chop 8 seconds speed 9. Scrape down sides.
Add all the rest of ingredients
Cook 100C, backwards, speed 1, 1 hour.
When finished cooking place into sterlized jars and seal, whilist still hot. when cold label and store in cupboard, once opened store in fridge.

Tip
This recipe can be made with frozen mangoes instead of fresh, (750 grams).
When the chutney is bubbling re- place the MC with the rice basket over the top to avoid it spiting every where. Can be eaten with curry or great with cheese.

Yum! Thanks for a great recipe. I took note of the other comments and made the following adjustments:
200g vinegar
200g sugar
100g fresh ginger
add 1 green apple
cook for 40 minutes, add another sliced mango, and continue cooking
added an extra 20 minutes of cooking time to help with thickening

This is great! I added a peeled green apple (cored) , another chopped onion, double the fresh mango, less sugar and less vinegar and added sultana. Could do with even less sugar than the 200 g I added. I also ramped up the chilli which is great. Cant quite remember but maybe double the flakes. Even more would be great. I also left the MC off the entire time, just the basket. Just fabulous!!!!

The flavour is lovely, but mine turned out way too sweet and too runny. I've added another chopped onion, a few sultanas and a chopped green apple for texture and I've tried to adjust the sweetness with the juice of one lemon.
Cooked for another half hour with the top open to reduce it down.
Turned out okay, and will definitely make this one again when our mangoes come into season, but will definitely follow all the suggested adjustements next time!

Great chutney, had some leftover frozen mango from when I was on a smoothie rampage, and wanted to clear out my freezer. Added a couple of granny smith apples about halfway to give some texture, plus a couple of chopped onions at same point, didn't add the chili, very happy with the result, thankyou for sharing!

Made this first time today.. Read all comments and took note of authors tip regarding frozen mangos, used just over 800gm of fresh mango, 200gm vinegar 200gm sugar, 70gm fresh ginger and 1 teaspoon of dried, placed the simmering basket on top from the beginning... hey presto, perfect. Nice consistency and not at all runny. Just raced to the supermarket to buy some more mango’s while their on special... next batch i’ll Reduce the amount of chilli as I found this one was a bit too hot for my liking... I’ll use this recipe again, and again and again. Great flavour

Delicious chutney . Only issue was that it was a little runny . I added another diced mango to it at 50 minutes and cooked the chutney for another 20 minutes . Still a little runny but the taste is amazing .

This was amazing! I read the other comments and only put 200gms of apple cider vinegar and 100gms of ginger however I also added 1 tsp corriander seeds ground, and 2 cardamom pods, 4 cloves of garlic, cinnamon. I added another mango and sultanas at 40 minutes and it worked perfect 👌

Made this today as i have an abundance of mangos - took advice off other comments and reduced the amount of sugar and ginger - didn't have enough whole ginger so added a teaspoon of ginger with what i had. I also used another mango and took on board the suggestion of cooking for 40 mins and then add another mango and cook for further 20 mins. I added some sultana's in with the second lot of mango. It looked a bit runny when i had finished cooking, however, settled and thickened up in the fridge to a nice consistency. Had a wee sample tonight and was delicious! Perfect timing with the christmas ham that is coming our way this week!

So glad I read the other comments advising to reduce the amount of ginger and vinegar. the aroma was not too pleasant while it was cooking, but tastes great. I was able to fill a few jars to bless others!

this was yummy. I did the same as Abby, adding a third mango halfway and reduced the sugar and cider vinegar to 200 grams and ginger to 100 grams. Could almost reduce the ginger a tad more but it's yummy. It was still a bit runny so next time I am only going to chop the onion and ginger and then add the mango. Thanks for sharing - very flavoursome.

2nd time making this yummy chutney. Altered just a little by only adding 100g of ginger and 250g of sugar. A little runny first time round so added some more mango half way through as suggested to add some chunk. very yummy!

I made this today. I feel the ginger is a little bit too much. Next time I will try 100 g instead. A lovely chutney. I also cut the sugar to 250 g and used 2 small red chillis instead of dried. Added an extra sliced mango in last 10 minutes for some chunk.

This chutney has a wonderful flavour. Second time around I only used 250gm of sugar as the first batch was a little sweet for my taste. I also found when making my second batch that it was a little runny so I cooked it with the MC off and used the steam basket instead. I also cooked it for a little longer than the recipe stated and found the consistency much thicker and more to my liking. Thanks for posting.

Delicious. Didn't have fresh ginger so used a tablespoon of bottled ginger. Omitted cloves as didn't have any, used white wine vinegar and white sugar as substitutes too. Frozen mango worked well, added one chopped apple as not quite enough mango. A good base recipe to then use whatever is available!

Great easy recipe thank you. I added 2 small fresh red chillies instead of chilli flakes & only used 250gms raw sugar but used the same amount for the rest of ingredients. Turned out great & yes great for Christmas gifts for curry/chilli luv'n friends.

DELICIOUS! I made this yesterday, just put it on a chicken & ham wrap - best addition! I didn't have 150g of ginger (thought I did, but it didn't weigh as much as I thought), so I added in some ground ginger Also didnt have curry powder so left it out. And I added in a small fresh chilli.
Nice amount - I think about 1L. I'm going to give some of the small jars to friends
