Janine's Marshmallows - Thermie and Friends

Ingredients

0 portion(s)

  • 180 grams sugar
  • 250 grams hot water
  • 1 tbsp gelatine
  • 1 tsp vanilla
  • 1 cup dessicated coconut (to coat)

Recipe's preparation

  1. Line slice tin (18 x 28cm) with baking paper.

  2. Place sugar into mixing bowl and pulverise 8 sec/speed 9.

  3. Add gelatine and hot water and cook 7 min/100C/speed 2 (or until sugar is dissolved).

  4. Remove lid and place mixing bowl on bench to cool to room temperature (or until a thick syrupy consistancy is reached).

  5. Replace mixing bowl and insert Butterfly. Place basket on top of lid and whip syrup 3 mins/speed 4 (until mixture starts to thicken).

  6. Remove basket and whip a further 3 min/speed 4 or until mixture is thick (similar to a meringue mix).

  7. Add vanilla and mix 15 sec/speed 4.

  8. Pour into tin and refridgerate for approx 15 mins until set.

  9. Use a wet knife to slice into squares.  Put coconut in a bag and toss each square in coconut until well covered.

Tip

If you wish to colour the marshmallow, just add a few drops of natural food colouring with the vanilla.

If you wish to colour the coconut just add a few drops of natural food colouring in the bag and rub in to get the desired effect.

    Mine flopped like a few comments here. At the end of the steps it was still liquid. Took the bowl out and cooled it on the bench again and it seemed to work better the next time. Kept doing that a few times and eventually I got a nice, fluffy, glossy mixture. I think the bowl naturally heats up after a few minutes of the blade going. Keeping the mixture cool is the key I think.

    Was very impressed with how these turned out! I waited until the sugar/gelatine/water syrup cooled to less than 37ºC (ie when I put the bowl back no temperature lights came on) - maybe those that had fails proceeded with the recipe while the syrup was too warm? Also, I used plain white sugar - maybe it doesn't work with other kinds, such as raw?

    FWIW, if you're planning to coat these in milled candy canes, don't. Cool For some reason it just melts off into a pink puddle. The marshmallow still tastes good, but you couldn't serve it or gift it to anyone. (I tried a candy cane dust/cornflour mix and that didn't work either.) If I was to try my use-up-all-the-old-candy-canes tactic again, I'd use the candy canes in step 2 as part of the sugar. Minty marshmallows! tmrc_emoticons.D

    I added an extra tablespoon of gelatine as I plan on using it in rocky road eggs and also added more Vanilla- still soft and fluffy.


    I made a different recipe that turned out horrible, could taste the gelatine and it set very firm- wasn't pleasant at all.

    Very light fluffy marshmallows, delicious rolled in toasted coconut. Mine had a two millimetre separation on the base of firm jelly but it didn't matter once covered in coconut.

    Made these today with my daughter. We whipped an extra 3 minutes because it didn't reach the desired consistency. It still wasn't really like whipped egg whites but we threw it in the fridge and crossed our fingers. Upon inspection it seemed as though it had miraculously set into a white fluffy marshmallow but when we removed it from the slice tin we discovered that it had split into two layers - a brown thin layer of jelly on the bottom and a thick layer of white on top. It tasted ok but was useless in the end as we had made the batch hoping to use them in TRTLMT rice bubble bars - they flopped massively using the "marshmallows" we had created. A chef friend suggested a lot longer whipping time to incorporate the sugar more thoroughly. A miss for us.

    Just wanted to say that these are fantastic!! I wa a little worried when I saw some of the other comments but decided to try it anyway and they are brilliant. I even did some in little rabbit moulds for Easter treats for the kids and they look beautiful. I added a little pink colouring to half of them too tmrc_emoticons.) thank you!!

    Epic Fail! (As my kids would say!) I followed the recipe and method to the letter, but just ended up with a bowl of syrup!!! What went wrong? Any ideas anyone? tmrc_emoticons.( I used veggie 'gelatin' - maybe that was the problem? The packet said it was the same.

    What am I doing wrong? I tried making these marshmallows twice, they form together like when whipping meringue and look like they will be OK, but are really sticky and not solid after resting in the fridge for 15 mins.They are very light and airy and melt in your mouth but not proper marshmallows. Anyone have any tips. My son is desperate!

    I toasted the coconut, that worked well to coat them and they are tasty.  They are very light and fluffy but not so much like a traditional marshmallow so I will be looking for a different recipe.  It was quick and easy though!

    These work great, very light and fluffy. I coloured the coconut in the TM, about 100gms coconut, a few drops of colouring ~ mix  on Counter-clockwise operation speed 4, 4 seconds. Worked a treat  tmrc_emoticons.D
