Ingredients

Biscuit
80 g sugar
250 g butter, softened
1 tsp vanilla extract
220 g plain flour
80 g cornflour
Filling
zest and juice 1 lemon (see General Tip)
120 g sugar
60 g butter, softened


Preparation

Biscuit

1.

 Pre-heat oven to 180°C. Grease a baking tray and set aside.

2.

 Place sugar into mixing bowl and mill for 15 - 20 sec | speed 9.

3.

Add butter and vanilla and beat for 40 sec | speed 4.

Add flour and cornflour and knead for 20 - 30 sec | closed lid | Interval or until mixture is just combined.

5.

Roll into small balls and place on prepared tray. Press down with back of fork and bake for approx. 25 minutes or until pale golden.  Set aside to cool until required.


Filling

Place zest and sugar into clean, dry mixing bowl and mill for 10 sec | speed 8.

7.

Add butter and mix for 30 sec | speed 4.

8.

Add lemon juice and mix for 10 sec | speed 4.

9.

Sandwich biscuits together with filling.

 


Tip

This is a tweaked version of 'Martha's Melting Moments' recipe on page 143 of 'Devil of a Cookbook'.  General Tip: Try using orange instead of lemon.  This recipe was contributed by Martha Galea, age 12, customer TAS.

Not a fan of this one...my biscuits were very hard and the filling very runny. Won't make again!

Very tasty and easy to make.

Very tasty and easy to make. Next time I will mill the sugar for a couple seconds before adding zest. I found the filling VERY tasty but a little too gritty. I also had to add icing sugar to get a thicker consistency, I found it too runny to begin with. Other than that, great!  Laughing out loud :D Laughing out loud

Does anyone know how to convert this recipe into using Natvia instead of sugar?  Cooking

yummy biscuits and very easy too.  I also added icing sugar to the filling to  make it a stiffer consistenancy.  Will definately be making these again!

I absolutely love this recipe! I also had to add icing sugar to my filling to get the right consistency, but it worked out perfectly and the biscuits were beautiful. I took some in to share at work and they were gone in minutes!! and with a resounding "Mmmmm" going around the building. I have made 3 batches already and have friends requesting I make more! I would definitely recommend this one! Well done Martha! :)

Smile great recipe, very tasty. I had to add some icing sugar into the icing to get the right consistency though.
I've made 3 batches now, my kids love them.
Today I just used the biscuit mixture and the kids put smarties on the top to make smartie cookies.
