MasterChef 'Extreme Brownies' Recipe

Ingredients

Brownie Batter

  • 440 g rapadura sugar or raw sugar
  • 1 tsp baking powder
  • 65 g Dutch Cocoa, (plus extra for dusting)
  • 100 g plain flour
  • 200 g dark chocolate, (55% cocoa solids - broken into pieces)
  • 225 g unsalted butter, roughly chopped
  • Large pinch of salt
  • 4 eggs, lightly beaten
  • 1 tbsp vanilla extract

Recipe's preparation

    Extreme Brownies
  1. Preheat oven to 160C

    Grease and line a 20cm square cake tin and set aside

  2. Place sugar into mixing bowl and mill 3 - 4 sec / speed 9

    Add baking powder, cocoa and flour and mix 5 sec / speed 10

    Remove from mixing bowl and set aside

  3. Place chocolate into mixing bowl and chop 1 - 2 sec / speed 5 or until it roughly resembles approx. 1cm chunks.

    Remove from mixing bowl and set aside in a separate bowl.

  4. Place butter and salt into mixing bowl and melt 2 - 3 mins / 60C / speed 2.

    Once melted, leave in mixing bowl and allow to cool to 37C.

  5. Add flour mixture and eggs and mix approx. 30 sec / speed 3 or until combined.

    Scrape down sides of bowl.

    Add chocolate and vanilla and mix 10 - 20 sec / Reverse / speed 2 or until combined, using spatula to assist.

  6. Spoon mixture into prepared tin, using back of a spoon to spread evenly.

    Bake for 1 hour or until top has risen (it may dip slightly in the middle) and a skewer comes out clean or with a few crumbs attached.

    Allow to cool completely in the tin.

    I 1.5 times the receipe and they work fine. Great when you need a larger quanitity and everytime i make it its always a hit and the leftovers even better if lucky enough to have some.

    I used 200g of brown sugar as others commented they were too sweet. Checked after 40mins and they seemed undercooked but 5mins more made these dry and inedible so in the bin they went! Waste of a block of choc 🙁

    These were lovely, deliously moist and soft on the inside and crunchy on the outside, I loved them. I was intially worried they were underdone (I acutally thought I had botched them) as the skewer was not dry even though the outside appeared cracked and cooked. I cooked them for an additional 15 minutes which I wish I hadn't as it was probably a tad overdone on the outside. The cooler they got the more the center set. So I am thinking don't worry if the skewer isn't coming out dry as long as the outside is cooked and you give it plenty of time to cool.

    Would be perfect with cream or icecream or both tmrc_emoticons.)

    I used 300gr sugar and cooked it for 50 minutes and it was PERFECT. I also used Cadbury milk cooking chocolate as its my favourite. The whole family loved it.

    Great! i only added 250g sugar based on comments and placed in oven for roughly 40mins. Turned out perfect. I added white chocolate ice magic and chrism m&ms to give it a Christmas look tmrc_emoticons.-)

    I use gluten free plain flour instead and put in a block of lindt dark mint chocolate instead the whole quantity of dark chocolate...its the perfect dessert to take over to someones place when gf treats arent always available...always the first dessert to be eaten by anyone tmrc_emoticons.;)

    i used 250 g sugar and still feel I can add less though definely sweet enough. 

    i added chopped toasted hazelnuts and lindt white choc chips for mega indulge factor

    I made these for Melbourne Cup bring a plate today. I used 1/2 coconut sugar and 1/2 raw sugar, rice flour instead of plain flour for a gluten free option for my Gluten free friends, forgot to add the vanilla extract! They were amazing - everyone really enjoyed them and couldn't believe they were gluten free.....Thanks so much for this amazing recipe.....My 16 year old son LOVES them.  So do I but, I like to blame him for having to make them....ha ha

    I think I'll try cooking for less time like others have suggested next time.
