Mock Chicken sandwich Filling

Ingredients

  • 1 heaped tablespoon Butter
  • 2 tomatoes
  • 2 onions (medium)
  • 1 egg
  • 2 teaspoons mixed herbs, dried
  • 1.5 Cup of grated Cheese of your choice
  • to taste Salt and pepper

Recipe's preparation

  1. Dice tomato for 2-3 sec on sp 5

    Place into another bowl

    Chop onion for 3-4 sec on sp 7

    Add butter to onion and cook 5 mins Counter-clockwise operation  sp 2 Veroma

    Add tomato and cook 10 mins Counter-clockwise operation sp 2 Veroma

    Add mixed herbs, salt and pepper.

    Add egg while on Counter-clockwise operation sp 2

    Add cheese and stir until combined

    You can add more cheese or breadcrumbs to help thicken but will once cool.

  • I've always liked mock

    I've always liked mock chicken.  This recipe didn't really work out for me - perhaps too much mixed herbs and not enough cheese.  It may have worked better for me if the ingredient weights were in grams.  I'll try again to see if I can achieve the correct balance of flavours.

    Childhood favourite. Mum made this a lot whenever we had to "take a plate." Mum always added a teaspoon of cornflour after cooking the onion to help thicken it and less cheese.

    My Nan makes this. All us grandkids (and our parents) love it. I even told Nan at Christmas time "don't worry about giving me a present, just make me mock chicken when I come home!!".

    I've just ordered my thermomix and can not wait to give this a go. I've made Nan's original version, but it's not as good as hers..
