  • 240 gflour (plain, wholemeal, buckwheat or a combo)
  • 160 g brown sugar, (or rapadura)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 2 large carrots
  • 50 g sultanas
  • 2 handfuls of nuts of your choice
  • 1-2 apples
  • 3 eggs
  • 80 g grape, seed/rice bran oil
  • ½ tsp vanilla essence
  • 30 g Shredded coconut

Recipe's Preparation

 

Put in buckwheat (or any grain combo you would like to use) and mill for a minute. Set aside.

Put in carrots, apples and nuts and then chop for 3 seconds on speed 8.

Add rest of the ingredients and put on closed lid interval speed for 20seconds or until just mixed. (you may need to use the spatula to help incorporate everything). If you prefer smooth muffins mix for a few more seconds.

 

Put in muffin trays and cook for 20 min at 180 degrees.

My kids love these.  Used GF pain flour & millet flakes.  Reduced sugar to 100G & used coconut sugar.

These are great! I use chickpea and sunflower seeds as my flour.  I don't use sugar & instead I add dates, honey or maple syrup & banana for extra sweetness.  They are great!

Love these!! Used SR gluten free flour and left out sultanas -delicious!!!! 

I love to cook gluten free, soy free and mostly dairy free :)

these are too good. made them with 1/4 the amount of sugar and replaced 1 carrot for 1 zucchini.

I used half the sugar. 2 apples. Gf p flour. Macadamia Nuts.

Yummo! Couldn't find Bckwheat flour so milled some chickpeas, sunflower seeds and linseeds and used half GF flour and also substituted sultanas with frozen raspberries. Will be a regular at our house. Smile

i love this recipe and as I am gluten free I am pleased I have found a great new recipe to add to my collection....they also taste great ....you can't tell they are gluten free...

Fantastic recipe.  Replaced brown sugar with 2/3C maple syrup, sultana's with frozen raspberries & nuts with sunflower seeds. Super yummy

I added 2 scoops of protien powder, 30 grams of chia seeds and 60 grams of buckwheat grain and then made up the rest with plain flour to the 240gram total. Very very tasty. 8 muffins gone in the first half hour. I needed to cook for 30 mins though. Will be making these every week.

I made these tonight into mini muffins, but forgot to add the sugar! they tasted yum and I dont think they really need sugar I used 2 sweet apples and they are lovely! Big smile :bigsmile:

Any idea how long they *should* last for in the cupboard? Or should they be kept in the fridge?

These look interesting, I'm not a sweet tooth but might give these a go. Cooking

Apart from mixing it all together and then realising I forgot to re-add the flour, these muffins were so quick & easy and my eldest (4yrs) loved them Big smile . I used almonds as it was all I had in the pantry and also tried half sultanas half craisins. I also did 140g Buckwheat and the rest GF Plain Flour and they came out really well. Will be adding these ones to the lunch box/snack menu. Thanks Cooking

Delicious and very easy. I used 180g buckwheat flour then made up the difference with gluten free plain flour and worked really well. Straight from the oven they are really moist and so tasty. Will be interesting to see how they are tomorrow, if they are still so beautifully moist. I also mixed for 25 secs Speed 4 and worked really well.

I've just made my third batch of these muffins in just a few weeks.  I love them because of the carrot, apple, saltanas & nuts.  They have become my pre-demo snack.  Freeze great.  You should post this recipe on the Thermomix in Australia Facebook page as part of their 'Lunchbox Treats' competition.  These would be great in the kids lunchboxes.  I had my 2 year old niece stay with me for a month and she was always asking for these muffins (and she does not eat carrot or apple...). 

Just one suggestion, I have found that the 20 seconds on Interval Speed does not bring the mixture together.  Today I gave it 25sec on speed 4 and found this much better.
