Banana Bread
- 150 grams almonds
- 150 grams brown sugar
- 120 grams Butter, Softened
- 2 eggs
- 140 grams Self Raising Flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda, or Bicarbonate of soda
- 70 grams golden syrup, or Honey
- 1 teaspoon vanilla extract
- 3 - 4 overripe bananas, Mashed

Recipe's preparation
Measure almonds into bowl and mill for 15 seconds on 7. Pour into a bowl and set aside.
Into the bowl, measure the butter and brown sugar. Mix for 1 minute on speed 4. Scrape sides of bowl.
Add eggs and mix for 20 seconds on speed 4. Scrape sides of bowl.
Add golden syrup and mashed banana and mix for 20 seconds on speed 6.
Add almond/hazelnut meal, flour, cinnamon, bicarb soda and mix for 1 minute on speed 6 or until well combined.
Pour mixture into greased loaf tin and bake at 160C for approximately 50-60 minutes.

Tip
You can add sliced banana on the top and glaze with golden syrup.

This has been my go-to banana bread recipe for two years now. It's absolutely beautiful. My slight adjustments:
- lightly blitz 100g walnuts before starting, then set aside. Stir through at the end
- i only add 120g of brown sugar
- 50g of golden syrup
- Cook for 65 minutes in a large bread loaf tin

I think this banana bread is better than Gloria Jeans! I cut down the brown sugar to 100g and only had 2 bananas. So good. I also used almond meal as I didn't have almonds. Will be making again and again.

Instead of brown sugar and
Instead of brown sugar and golden syrup, I used dextrose and rice malt syrup and this turned out to be the BEST banana loaf I've ever made! The quantity filled two loaf tins (bonus!) and it keeps beautifully in the fridge and slices perfectly. I'll never bother with any other recipe again

I didn't bother mashing the bananas first, just broke in half and throw in thermie. Isn't that what Thermo is good at, saving us time and energy?!
I also added a pear (didn't peel it) that was getting a bit soft, in place of one of the bananas.

I made this with GF flour and
I made this with GF flour and sugar cut back to 90g and bananas weighed in at 400g(size will affect the proportions in the mix). Nice, but not a hit with my coeliac. I will not rate recipe as I made substitutions.

Love this Banana Bread recipe!I didn't mash the bananas, just broke them into pieces as I added them to the Thermomix bowl and I also reduced the amount of sugar to 90 grams. Great recipe, thank you!

I love this recipe, have made couple of times. Was craving it but sadly my oven thermostat is broken So I gave this a go in the varoma in a silicon bread mould, it was delicious! I put it in the Varoma 50mins Speed 4. (then 5 mins in my who knows what temp oven to finish it off)

have made this several times now and always very moist and delicious (cooked for around 60ish mins) but often dense and a bit stodgy (not that anyone seems to mind!). Read through the comments more thoroughly this time and saw the 90 min cook time, tried but was too long and the bread has ended up with a rather thick, dry crust so will have to make sure I check in between next time. Very disappointing! Otherwise an absolutely delicious banana bread! Is definitely THE banana bread I always make now!

At last a dark, dense and moist banana bread, not a cake! This is lovely and devoured by the whole family. We lightly toast it and then have it with a thermo hot chocolate. Just like going out to a cafe! Get on it!

Oh no! This was a disaster
Oh no! This was a disaster for me. I bake about twice a week and consider myself to be pretty good however, this was a total FlOp, literally - even though I followed the recipe to a T. It's uncooked and has completely collapsed - feeling very sad. Don't think I'll try this one again.
