Prepare your pumpkin ahead of time, I used butternut pumpkin. Cut it in half length ways, scrape out the seeds and place the halves flesh side down in baking paper on a cooking tray. Pour a small amount of water over the skin and put in to the oven for around an hour at 180. You'll know it's ready when the pumpkin is soft when you press on the skin.
You can then scrape out all the pulp for use in this and other recipes!
