Peanut Satay Sauce (Thick)

Ingredients

6 portion(s)

Sauce

  • 1 onion, Medium size
  • 1 clove garlic
  • 10 grams olive oil
  • 150 grams crunchy peanut butter
  • 10 grams soy sauce
  • 10 grams fresh lemon juice
  • 10 grams brown sugar
  • 165 grams coconut milk

Recipe's preparation

    Sauce
  1. Peel and quarter onion.  Place into Thermomix bowl.
    Peel garlic.  Place into Thermomix bowl.
    Chop for 5 seconds, speed 7.

  2. Place Olive Oil into Thermomix bowl.
    Sautee Onion and Garlic for 3 minutes, 100 degrees, Speed 1.

  3. Scrape down Thermomix bowl with spatula.

  4. Add remaining ingredients.
    Cook for 3 minutes, 100 degrees, Speed 2.

Tip

This will produce a thick, crunchy, semi-sweet peanut satay sauce.  Goes really nicely with chicken, vegetables and rice.
Use smooth peanut butter if you wish to have a less crunchy sauce.
Great for kids, as it is mild and semi-sweet.

    Wanted a satay sauce to rival the Thai restaurants but without fish sauce as husband doesn't like it. This was a great easy recipe. Only had 100g of smooth peanut butter so added 50g salted and roasted peanuts chopped on speed 5, 5 secs. Added a shake of chilli flakes too. Delicious. Will definitely make again. Made about 1.5 -2 cups. we didn't eat it all and it reheated well the next night. I think it would freeze well too.

    I had to make my own coconut milk, used 1/2 an onion and used smooth peanut butter as that's what I had.

    Just whipped this up to go with some prawns, followed recipe except added 3 tsps red curry past to give it a bit more of a kick after reading the comments. Husband said it is just like the one we get in Bali, so think it is a winner and will be a regular here

    Such a good recipe, thankyou. Made a little thinner with more coconut milk (lite), and because I like a little heat to my sauce I added a birds eye chilli at the first step. I will use for my go to satay recipe from now, in Gado Gado as well as over BBQ veggies and many more...Yummo

    Really tasty satay. I used only 1/4 of a large onion & I recommend chopping 5 secs or so on speed 8 as I found 5 sec on sp 7 left a few bigger pieces of onion which I didn't think would be too good in a satay sauce, 1 tsp curry powder & 1/2 tsp of chilli powder. A bit more sugar,  lemon juice & soy sauce just to balance the flavours.. Thanks so much.

    This was the best.  I read through the comments and decreased on the onion to 1/2 onion the added an extra 10gms of everything else.  I also added 3 tsp Red Thai Curry Sauce (as I didn't have any curry powder) and a splash of wine and a tsp of dried chilli flakes.  It then had a bite to be appreciated.  I served this over chicken satay skewers and a salad of mixed lettuce leaves and onion with a sesame oil and balsamic vinegar dressing.  Ymmmo

    Tried this tonight, really nice. I used smooth peanut butter, only because that's all we had in the cupboard. I threw in an extra tablespoon of peanut butter and a bit of sweet chillie sauce, cause I like a little bit of bite.  Had it over chicken skewers but it would be delish with just roti bread. tmrc_emoticons.)

    Thank you for sharing. This was so easy and all ingredients were in the cupboard so I didn't need to go and buy anything. Tastes great too. I also only had coconut cream but it was fine. I'll be turning it into satay chcien risotto a little later.
