Ingredients

Topping
90 g Cheddar cheese cubed
1 teaspoon cracked pepper
1 teaspoon sea salt
Muffins
60 g Cheddar cheese cubed
2 clove garlic
250 g leeks roughly chopped
250 g zucchini roughly chopped
15 g olive oil
300 g Self Raising Flour
2 teaspoon curry powder
1 teaspoon coriander, ground
1 teaspoon cumin, ground
100 g Butter cubed
2 eggs
250 g buttermilk
30 g olive oil


Preparation

Topping

Add all ingredients and grate for 10 seconds / speed 5 - set aside


Muffins

Pre-heat oven to 200 degrees

Add cheese to TM bowl and grate for 10 seconds / speed 5 - set aside

Add garlic to TM bowl and chop for 3 seconds / speed 9

Add leek and zucchini and hop for 10 seconds / speed 5

Add oil and saute for 3 minutes / Varoma temperature / speed 1

Pour mixture into simmering basket and press out excess liquid - cool

Add flour, curry powder, ground coriander, ground cumin and butter to TM bowl and mix for 8 seconds / speed 5

Add zucchini mixture, cheese, eggs, buttermilk and olive oil and set to closed lid position and knead for 25 seconds / Interval speed

Transfer mixture to muffin pan

Sprinkle topping on muffins

Bake in hot oven about 20 minutes

Cooking These muffins are great, reheat nicely and are still fabulous cold in my lunch box 2 days later. Thanks for the recipe, will definitely become one of my regulars.
