Ingredients
Pumpkin and feta dip130 grams cooked pumpkin
1 cooked carrot
60 grams ground almonds
40 grams raw cashews
1/2 clove garlic
40 grams firm feta
to taste salt and pepper
sprig Parsely
Preparation
Pumpkin and feta dip

Place all ingredients into mixing bowl and pulse for 2-4 seconds until desired consistency is achieved.
Tip
I enjoy this dip chunky. It is perfect to take along to a party.

This has great flavours! I roasted the pumpkin to bring out more flavour in it. Next time i wouldnt use ground almonds, but whizz whole almonds with the dip to add more texture to it.
Everyone loved it though and have been asked for the recipe multiple times!
You could roast the pumpkin
You could roast the pumpkin and carrot if desired - that would add another dimension to the flavour, any cooked pumpkin is ok, just make sure it is drained and cooled.
