Pumpkin Jam (Misti Kumra)

Ingredients

  • 2.5cm piece cm fresh ginger, peeled
  • 2 oranges or lemons, peeled with potato peeler
  • 1 kg sugar
  • 1 kg pumpkin, peeled and in pieces small enough to fit through hole in lid

Recipe's preparation

  1. Process pumpkin 250g at a time for a few seconds on speed 6. Reserve after each 250g.
    2. Put ginger and orange or lemon zest into Thermomix bowl. Process for 1 min on speed 10. 
      Add 100g of the sugar and process on speed 10 for one minute.  
    3. Add orange flesh (without pips) and using speed 7 for approx 5 seconds, beat juice into the ginger and zest mixture.

    4. Add the reserved chopped pumpkin and rest of sugar to bowl, alternately,  processing on speed 5 bit by bit and allowing sugar and pumpkin to settle so as not to be too high in the bowl.

    5.  Set time to ten minutes and temperature to 90 degrees, speed 2 with measuring cup on.

    6.  Replace measuring cup with basket.  Set timer to 25 minutes and increase temperature to Varoma, speed 2.  Keep an eye on it to make sure that it does not bubble over.  Check and scrape jam from lid and underneath the basket.

    7.  Cook for another 30 minutes on Varoma, speed 2, then test to see if it is set by spooning a little on a saucer that has been in the freezer.

    8.  Pour into sterilised jars.  This amount made five whiskey tumblers of jam for me.

Tip

Pumpkin is a good source of vitamin A, vitamin C, protein, potassium and fibre. Eating pumpkin helps to lower prostate cancer, prevents kidney stones, and makes your skin grow healthy.

This jam goes well with cheese or can be used on toast, muffins, pancakes, scones and even in place of butter on a chicken sandwich.  It can go into a glaze for ham too.  Try it with fresh ricotta.

I converted the recipe from BIDESHI BABURCHI, a recipe book for westerners living in Bangladesh. 

The jam in the photo is made with rapadura sugar, so is very dark.  If you'd like a more golden appearance, make it with raw or white sugar.
