Tip

I used this recipe to frost some grain free, baked doughnuts.  After placing them in the fridge for 15 minutes, the frosting hardened a little almost to the texture of a bought chocolate doughnut. I was pretty happy about that!

Anything iced with this frosting should be kept refrigerated if not being consumed within a short time.

  • I was whipping up cupcakes

I was whipping up cupcakes for a party when I realised I hadn't thought of icing for my vegan guests. Did a search and came across this one. I was a bit worried but it turned out delicious! Very soft so would use less water or more dates next time but I just stored the cupcakes in the fridge until it was time to serve. Have shared your recipe on my facebook page (Mixie von Cook) as everyone enjoyed it so much that I wanted to spread the word!

    Unbelievable!

I was sceptical about how well this could replace chocolate frosting but I was so wrong to be concerned.  This is delicious. I was worried it wouldn't be sweet enough for my taste, so I added about 20g of Rice Malt Syrup, but I'm not sure it was necessary and I will try withou next time.  I had leftover after icing a sugar free too easy chocolate cake, I ate it all the leftover icing the next day straight out of bowl.  Mine was very runny at first, but thickened after being in fridge for a while.  I would try a little less water next time.  After being in the fridge overnight, it was like chocolate mousse and I couldn't help thinking it would be a great dessert on its own.

I used water instead of the coconut milk and it tastes amazing!  It passed the kid test, for sure!

I've iced cupcakes with it for my daughter to take to school today for her birthday - I hope it doesn't melt too badly!

Loved this frosting recipe!!  Tasted a bit coconuty but my very picky sugar-aholic nieces even devoured it!  Makes a huge batch though, wonder if you could freeze the leftovers? Thanks for a great recipe xo
