- 150g bacon, chopped
- 400g tin diced tomatoes
- 2 garlic cloves,crushed
- 1/2 teaspoon dried chilli flakes
- 1 tablespoon olive oil
- 1/2 teaspoon oregano (dried)
- Sea Salt & Cracked Black Pepper
- 50g Parmesan cheese, cubed
- 1 Onion, peeled and halved
- 25g olive oil
- 25g Butter
- 350g Aborio Rice
- 100g white wine
- 1100g chicken stock
- flat-leaf parsley, chopped for garnish

Recipe's preparation
- Place parmesan cheese into TM bowl and grate for 10 seconds/speed 9. Set aside. Wash and dry bowl.
- Place bacon into TM bowl and saute for 3 minutes/varoma/reverse + soft speed MC off.
- Add tomatoes, garlic, chilli, oil, oregano, salt and pepper and simmer for 15 minutes/100 degrees/reverse/soft speed.
- Set aside and keep warm. Wash and dry TM bowl.
- Place onion into TM bowl and chop for 3 seconds/speed 6. Scrape down bowl.
- Add oil and butter and and saute for 5 minutes/100 degrees/speed 1 MC off.
- Insert Butterfly. Add rice and wine and saute for 2 minutes/100 degrees/reverse/speed 1.
- Add stock and cook for 16 minutes/100 degrees/reverse/speed 1.
- Pour into Thermoserver and stir through parmesan cheese and half the arrabbiata sauce and allow to rest for 5 minutes.
- To serve, place into serving bowl and spoon the remaining sauce over the top and garnish with chopped parsley.

I realised when the rice had almost finished cooking, that I'd forgotten to add the stock paste. I just added the vegie stock concentrate (Basic cookbook) and added another 5 mins to the cooking time.
And I didn't have any parmesan so I just threw in some grated tasty cheese.
It was so delicious. Had a good, solid amount of heat, which probably made up for my stock oversight. This will become a go to for me.

Lovely. Used punnet of halved cherry tomatoes and small tin of tomato paste instead of canned tomatoes. Used vege stock in place of chicken stock. Added baby English spinach at end. Fried the bacon in a frypan as I prefer the flavour, then added them back into tomato sauce as it was cooking. Was easy and delicious.

I followed the recipe to a tee, except for the addition of a bit more chilli and only 1L chicken stock (as I wasn't prepared to open another packet of stock!). There was still adequate liquid using only the 1L of stock.
The arrabbiata sauce was so good that I too will make double next time.

Was wanting risotto for tea and surfed RC and guess what, made this as looked easy and had everything on hand. Good decision, hubby even went for seconds. As only hubby and I at home, we have enough for a few meals ahead. May even turn into arancini balls. Give it a go, it won't disappoint.

Sen-smegging-sational. My first ever risotto and this is amazing. I doubled the tomatoes, garlic and oregano and added chorizo at the same time as the bacon. It is divine and the tomato sauce also doubles up to make penne arrabiatta which I have been looking for but couldnt find.

I reduced the chilli flakes as I dont like my food particularly spicy, but it was still pretty hot for my liking. Will need to reduce even further in future.
I don't have a thermosaver (yet!) so I just put the parmesan and tomato mixture back into the bowl, stirred on reverse for 30 seconds then let it sit for 5 minutes. This made it beautiful and creamy.

Really Yummy! I made a few changes (used dried basil as I didnt have any oregano, no wine so used plain water with a little vege stock paste, added baby spinach and black olives). Will definitely double the tomato sauce next time, as suggested by others
