  • 150g bacon, chopped
  • 400g tin diced tomatoes
  • 2 garlic cloves,crushed
  • 1/2 teaspoon dried chilli flakes
  • 1 tablespoon olive oil
  • 1/2 teaspoon oregano (dried)
  • Sea Salt & Cracked Black Pepper
  • 50g Parmesan cheese, cubed
  • 1 Onion, peeled and halved
  • 25g olive oil
  • 25g Butter
  • 350g Aborio Rice
  • 100g white wine
  • 1100g chicken stock
  • flat-leaf parsley, chopped for garnish

Recipe's Preparation

  1. Place parmesan cheese into TM bowl and grate for 10 seconds/speed 9. Set aside. Wash and dry bowl.
  2. Place bacon into TM bowl and saute for 3 minutes/varoma/reverse + soft speed MC off.
  3. Add tomatoes, garlic, chilli, oil, oregano, salt and pepper and simmer for 15 minutes/100 degrees/reverse/soft speed.
  4. Set aside and keep warm. Wash and dry TM bowl.
  5. Place onion into TM bowl and chop for 3 seconds/speed 6. Scrape down bowl.
  6. Add oil and butter and and saute for 5 minutes/100 degrees/speed 1 MC off.
  7. Insert Butterfly. Add rice and wine and saute for 2 minutes/100 degrees/reverse/speed 1.
  8. Add stock and cook for 16 minutes/100 degrees/reverse/speed 1.
  9. Pour into Thermoserver and stir through parmesan cheese and half the arrabbiata sauce and allow to rest for 5 minutes.
  10. To serve, place into serving bowl and spoon the remaining sauce over the top and garnish with chopped parsley.

Yum.  I added 300gm diced chicken to the sauce while cooking (hubby was greatful - what is it with men and meat?).  Definitely needed the full half teaspoon of chilli flakes   Would add some vegetables next time - the handful of peas I threw in at the end just did not cut it!  Lovely base sauce to work from though and plenty for whole family.

This was so delicious! I made a few additions: At the start I grated basil with the parmesan (step 1), I added fried chicken mince with the stock (step eight), and I added roasted veggies (beetroot, pumpkin, zucchini, butternut, corn, parsnip and carrot) at the end in the thermoserver (step 9). Whole family loved it!

Used ham as well!

I made this tonight with leftover Xmas ham instead of bacon. I also added frozen peas right at the end and mixed the whole sauce in instead of topping it with half. Great recipe, will make it again!

Wow this was really yummy. I made it almost exactly to the recipe - just a bit less chilli for the kids - and the balance of flavours was perfect. I will definitely be making this again. Thanks for posting! Oh and I didn't wash the bowl out after cooking the sauce, just scraped well and it was absolutely fine.

This is the best risotto yet!  As I am consious about having vegetables in main meals I added 100g mushrooms at the same time as the stock.  While the sauce & risotto were cooking I roasted 200g cubed pumpkin in the pan which I put in the ThermoServer along with baby spinach.  In another risotto recipe you grate parmesan cheese with basil to make a basil parmesan, so I did this to sprinkle on top.  I think there may be a mistake with the chilli quantity as I only added 1 teaspoon and it had great heat.  It should probably read 1/2 teaspoon, not tablespoon.

Where it said to set aside the tomato, chilli,oregano mixture I left it in (by mistake, but I'm glad I did)... cooked it all together for an extra 9 minutes and it was perfect.

Yay! Tried this tonight and turned out great!! The flavour was quite addictive, the other half enjoyed it too (which can be quite tricky sometimes!) Leftovers for lunch tomorrow, can't wait  Big smile

The Thermo server is a 2.2 litre container, which is provided free of charge if you have a delivery demo when your T/X is delivered..

The Thermo server is supposed to keep food warm for up to 2 hrs, which it may do if you live in Chennai or the Sahara Desert. However if you live around or below 34 degrees South of the equator, during the colder months the food "keep warm" capabilities are sadly diminished which leaves you with luke warm food, which needs to be reheated. Please do not put your Thermo server in the oven to heat things as there are some sad stories on the forum about warped lids. regards Anne Smile

I'm relatively new to the Thermomix world and this was the first time I had the courage to make a whole meal in this fabulous machine. It was absolutely delicious - hubby was raving about it all night so thank you - I'll be using this again and  am sadly excited about my next Thermomix meal.

By the way - what is a Thermoserver ? Was it supposed to come with my TM31 or do I have to buy it separately ?

Delicious. Used chorizo in place of bacon along with some mushrooms. Easy and dinner party worthy.

This is a great recipe for all the family.  The only thing I changed was the chilli.  I just used 1/2 teaspoon of crushed chilli flakes which gave it enough warmth for the adults but not enough for the children to notice.  I will be definitely be adding this to the family favourites.

I just made this and put olives in it. Was yum. I think I need to cook it for 14 mins next time as was a bit over cooked.

My favourite risotto. This recipe is now one of my staples. Thanku for sharing.

We made this last night and it was delicious! I was a little nervous as it seemed pretty liquidy still once done stirring, so I ran it for another 4 mins on slow stirring and it turned out perfectly! I also used ham as I forgot to buy bacon (baby brain)!

Hi Trish, Glad you liked it. I sometimes substitute the bacon (rind removed) with pancetta.
