Insert Butterfly into TM bowl.
Place egg white into TM bowl and beat without MC for 1.00min on Speed 4.
Scrape down the sides of the bowl and then set time to 2mins on Speed 4 - slowly incorporating the icing sugar - one tablespoon at a time through the hole in the lid.

Tip
Note: If a stiffer consistency is required then mix another 50g icing sugar, If a thinner pouring fondant is required then add 1-2 tablespoons water.

Hi amulligan - Yes at the time I did use the store bought Pure Icing Sugar but now mill my own white granulated sugar before making this icing. I need to work with pure white icing and the raw sugar just does not cut it. Granulated sugar is cheaper to purchase than the caster sugar. Hope this helps.
By "Pure Icing Sugar" do you
By "Pure Icing Sugar" do you mean the bought stuff rather than milling from raw sugar? And, if so, is that due to the colour?
I'm keen to try it once I understand that.

I've used this recipe a few
I've used this recipe a few times with perfect results each time. I never need to use the water and it makes a really stiff icing. I used it to ice my gingerbread and it works a treat!

Worked great. I made Triple. My TM struggled a bit at the end, but I just took out the butterfly and it finished the job. Also added cocoa for chocolate icing

Tried this today to decorate gingerbread men. Worked great! Didn't pre-weigh the sugar just kept adding till I got the consistency I liked!
I think my scales were
I think my scales were playing up a little but I only needed about half the sugar suggested to get a really firm consistency. More than this and my motor was not sounding happy.
