Satay Sauce

  • 1/4 teaspoon fennel seeds
  • 1/4 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1 tablespoon tumeric ground
  • 3 clove garlic
  • 1 red chilli, (seeds optional)
  • 2 tablespoon light soy sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon sugar
  • 2 tablespoon olive oil
  • 1 can coconut milk
  • 3 heaped tablespoon crunchy peanut butter
  • pinch salt
Chicken Stirfry

  • 600 gram Chicken Thigh Diced
  • 2 carrots
  • broccoli
  • cauliflower
  • 1 cup frozen peas
  • Any other veggies of choice
  • 400 g Basmati or Jasmine rice

Recipe's Preparation

Sauce

1.

Place all dry spices and salt in the TM Bowl
Mill for 1 min, speed 10


2.

Place garlic and chilli in the bowl and chop for 8 secs speed 7


3.

Add remaining sauce ingredients and milled spices, cook for 5 mins, 90deg


4.

Once cooked blend up - 30 seconds speed 10.


5.

Set aside in thermoserver



Chicken Stirfry & Rice

Cook rice as EDC directions - Add required amount of rice to basket  with the veggies and sliced chicken in the varoma.  Place chicken in the bottom of veroma.
Cook 12 - 16 mins on Varoma temp, stopping after 8 mins to stir chicken.


7.

Remove Rice and set aside in thermoserver.

Contine to cook chicken for a further 5 minutes, until cooked in vermoma.


9.

Finally place all chicken, veggies with sauce in TM and cook 100 deg counter-clockwise operation Gentle stir setting for 5 mins

This is seriously the best satay recipe EVER. It gets cooked in my house weekly and who ever is over says its the best satay they've ever eaten also!! Thank you so much for sharing this recipe Smile

Absolutely delicious. I've made this twice now, the 2nd time with light coconut milk- definitely a better flavour and a bit thinker with the full fat stuff! I find the instructions a little vague in parts- missing speeds but I just set it on speed 2 in both instances and it was fine.

Awesome! No need to go to a authentic Thai restaurant.

my husband and I cooked this one tonight and not only did we devour but our 14month old twins scoffed it down. Hand down the best main meal I've cooked in my Thermie thus far!

We all loved this.    It was my first time using Varoma for vegies and chicken so took a while to work out but all turned out great.  Also, we didn't like the idea of raw chicken juices dripping onto the rice so cooked that separately.

Thanks for the recipe...this was the first thing i've made in the thermomix and although it was lovely (and the kids loved it) i found the recipe a little hard to follow (probably has i haven't the experience yet!).  A few questions...when making the sauce and all ingredients are added what speed do you set it on?  And for instruction 6) in the chicken stir fry bit...do you cook with rice in basket/chicken + vegies in veroma, according to rice instructions (as stated in EDC) or the above varoma instructions?  Thanks for a delicious recipe though!

All 5 of my dinner guests loved this one! Added an extra chilli + seeds for some kick, as well as leaving out the cauliflower. Might double up on all the spices next time, as I didn't taste the flavours as much I wanted to

Loved this one. Made it nice and spicy because the kids were away.  My husband raved about it and said it was better than a bought one.  Which is really saying something because he rarely comments either way!

Love Love Love this one!

I only had cauliflower and chicken in my fridge, but made this anyway. My non-vegetable eating husband wolfed this down and said it was the best curry he's ever had! Winner! We will definitely be eating this more often

This is the best satay recipe! My husband said it is even better then the satay from the thai place we go to. And my kids call it peanut butter chIcken and just love it. I have also made it as a veggie satay and it was so nice :)

Delicious! I did my normal trick of not looking in my cupboard to see if I had all of the ingredients, so had to substitute oyster sauce with hoi sin sauce and a bit of extra soy. I cant wait to try this again true to the recipe.

I also had to cook my rice for a little longer... I overloaded my varoma with veg, so maybe my rice neededmore time.

Really love this recipe and use it a lot. I have found it easier to make with 500g frozen carrot, cauliflower, broccoli and green bean mix defrosted and I still add 1 extra carrot and the peas. The sauce is brilliant.

Really tasty. Whole family loved this. I was a bit unsure because of the peanut butter as I am not a huge fan but was not disappointed. Definately a keeper.

This is so yummy! Makes a Hugh batch for just the two of us.....so we had left overs for lunch.would recommend this!!!

Delish, made this and we loved it, i must have cut the chicken too small as I didnt use Varoma just popped in with the ceg and sauce at the end for 5 mins !!

My goodness, so delicious!  I used only 1 tablespoon of sugar and the sauce was perfect.

Nom Nom Nom! Easy to make, delicious! Next time will use less sugar, as was a tad too sweet for our tastes, otherwise excellent. Recipe instructions needs to be updated as some things missing like speed etc.  However I just winged it and it worked fine. WIll become a favourite in our house for sure, as plenty of leftovers too!

OMG! So good. I didn't have fennel seeds so omitted that and I didn't add any oil. Still very tasty. Will make again!

The best satay chicken I have ever tried. Soooooo delicious. This is going to be a family favourite for sure!  Smile

Made this sauce today while my son was at school and am just completeing the recipe now. The sauce tastes so good i couldnt stop eating it and was really wishing it was dinner at 2'oclock this arvo. Smile Will definitely make again. was so easy and tastes amazing.

Have made this several times now and it is always amazing and the flavour is restaurant quality.

For the final step, I place the butterfly in to mix the chicken/veggies and sauce together and it stops my chicken from being as shredded! Thigh tends to hold its shape better than breast too.
