Ingredients

Satay Sauce

  • 1/4 teaspoon fennel seeds
  • 1/4 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1 tablespoon tumeric ground
  • 3 clove garlic
  • 1 red chilli, (seeds optional)
  • 2 tablespoon light soy sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon sugar
  • 2 tablespoon olive oil
  • 1 can coconut milk
  • 3 heaped tablespoon crunchy peanut butter
  • pinch salt
Chicken Stirfry

  • 600 gram Chicken Thigh Diced
  • 2 carrots
  • broccoli
  • cauliflower
  • 1 cup frozen peas
  • Any other veggies of choice
  • 400 g Basmati or Jasmine rice

Recipe's Preparation

Sauce

1.

Place all dry spices and salt in the TM Bowl Mill for 1 min | speed 10

 


2.

Place garlic and chilli in the bowl and chop for 8 secs | speed 7

 


3.

Add remaining sauce ingredients and milled spices, cook for 5 mins |  90deg | speed 2

 


4.

Once cooked blend up - 30 sec |  speed 10.


5.

Set aside in thermoserver



Chicken Stirfry & Rice

6.

Cook rice as EDC directions - Add required amount of rice to basket. With the veggies and sliced chicken in the varoma.  Place chicken in the bottom of veroma. Cook 12 - 16 mins on Varoma temp, stopping after 8 mins to stir chicken.

(yes save time and cook all together, rice, chicken and veggies)

 


7.

Remove Rice and set aside in thermoserver.

 


8.

Contine to cook chicken for a further 5 minutes, until cooked in vermoma.

 


9.

Finally place all chicken, veggies with sauce in TM and cook 100 deg counter-clockwise operation Gentle stir setting for 5 mins.

The family and I loved this recipe the only thing I did differently was to cook the thigh in the sauce. Beautiful.

This was absolutely delicious. Used  a dried chilli and left the seeds in which gave the dish just enough of a hit. I used coconut palm sugar, which I had in the pantry. My husband said it was definitely a five star. Will be going in to my favourites folder.

I'm confused too, and I really want to make it. Please Sally(?) can you explain, are the veggies and rice all thrown into the varoma basket, with the chicken pieces forming the first layer in the basket? Thank you Smile

So Delicious!!!! Best tasting satay sauce and so quick and easy.

i didn't have coconut milk so used the suggestion of 25g dessicated coconut and 250ml

water, and blended for a minute instead of 30secs and it worked perfectly

GREAT RECIPE I ADDED ONE BIG RED CHILLI SEEDS AND ALL PERFECT MILD-MED SPICE. USED HALF THE SUGAR AND USED 100% PEANUT BUTTER.  ITS LIKE A MALAYSIAN SATAY

NEXT TIME I THINK I WILL ADD EXTRA COCONUT MILK. WILL MAKE AGAIN

That sauce is divine!!!!

Next time I'll definitely add onions. Missed not having onions. 

cooked this for tea last night...yummo.  everyone thought it was delish.  used rump steak instead of chicken and used the variations of desicated coconut & water instead of coconut milk (as i didn't have any).  will use less water next time (150gm instead of 250gm) as there was a lot of liquid.  Very yummy - will cook again.  

400ml works fab

Absolutely delicious!! I used left over roast chicken from woolies and added onion with the chilli and garlic when making the sauce. Huge hit with all of my family!

Just wondering what size can of coconut milk people use...270ml or 400ml?

This is so delicious. My fussy kids loved it and the sauce was a winner with my husband and in-laws too. I love the subtle flavour of the fennel.

I have a great suggestion for it too. As I didnt have any coconut milk, I simply added 25 gms of dessicated coconut and 250 mls of water after step 3 (ie there was no cocnut milk in the 5 min cooking of step 2.) Then I blended the entire sauce for 1 minute. Gorgeous result and healthier to have less coconut.

 

Also I used 1T of honey instead of 2 T sugar,  and only 1T of olive oil. It was awesome, thank you Sally.

Easy to make and delicious.  I used chicken breast and steamed for 20 mins.

I cooked on speed 2 for around 20 minutes, or until chicken was cooked. I removed the rice after 14 minutes.

Very yummy! I made this for my husband and I and my hubby absolutely loved it. Full of flavour. I used chicken breast instead of thigh and it was still perfect.  Smile

I made a change as cooking on speed 4 didn't steam anything in my Varoma. So I cooked on speed 2 for around 20 minutes. 

just wanted to check it starts on point 6) cook rice as EDC directions which is 20 mins/100 degrees/speed 4. but then it says to cook 12-16 mins on varoma temp speed?.   which one has people been doing?

Loved it, left the sugar out and used Mayvers peanut / seed butter

This is the best ever satay recipe I have ever tried, I make this regularly and everyone loves it! Cooking   I also just make the sauce and pour it over anything!

Oh man this is delicious. I got my thermomix today and this was the first meal I made, so yummy. Made it for my boyfriend and best friend and both loved it. 

I did add an extra heaped tablespoon of crunchy peanut butter in though as the consistency was a bit runny and can't go wrong with extra peanut butter yum yum.

Just made this, it is soooo good! Thanks for the recipe.

This was phenomenal ... even my fussy 2yo was into it! I didn't have tumeric so added a teaspoon of yellow curry paste and it was great ... I also hate peas so I substituted corn kernels ... perfection!

AMAZING!!

I wasn't sure what to have for dinner tonight, I had chicken, coconut milk, peanut butter and a fridge full of vegies, so I decided to put them all to good use and make this delicious meal! I didn't have any of the spices on hand and this was still a lovely meal without them. I loaded up the varoma with lots of extra vegies and I served it without rice.

I'll be adding this to my regular meal rotation, can't wait to make it again!!

Delicious! The whole family loved this dish, used light coconut milk and carrot and broccoli for veges. I used varoma speed 4 for 21mins until chicken, rice and veg were all cooked and then just mixed through the sauce. Thanks for sharing
