- 210 grams raw sugar
- 20 grams water
- 150 grams pure cream
- 150 grams Butter
- 5 pinches sea salt
- .5 vanilla pod seeds

Recipe's preparation
Add all ingredients into the TM bowl and cook 12 minutes VAROMA temperature, SPEED 2. Pour into sterile jars and seal when cold. Caramel will thicken on cooling. If you prefer a thicker caramel, cook for a further 5 minutes.

Substitute half the raw sugar with brown sugar for a richer caramel flavour

I just made a double batch,
I just made a double batch, used a 900ml jar and filled to where the neck tapers for the lid. Pretty much the Sticky Date Pudding sauce - which is yummy!! I used half raw sugar & half brown sugar and double cream. I cooked it for 15mins then a further 5mins so I'll see how thick it gets and adjust the cooking time next batch.

This is amazing. I could eat by the spoonful. I used rapadura in place of brown sugar. Cooked for 17 mins. It was very dark in colour, but overnight it has changed to a lighter more 'caramel' colour.

Nice flavour. I used half brown sugar and half raw sugar. I cooked it for 16 minutes. Perfect. Thickened even more when cold. Stored in fridge. I use this sauce on icecream, in yoghurt, in chocolate puddings. You could use it on just about anything that goes with caramel. I used 6 pinches of sea salt and couldn't taste any salt at all. Wondering if it's because of the unsalted butter. Because to me this sauce tastes exactly the same as my sauce for sticky date without the salt, and that sauce is made with salted butter. But in saying all that, this sauce is a winner. Might try with salted butter next time. My sauce is one week old and still using it and tastes sensational.

My husband and mother-in-law were keen for me to make this when I was showing my mother-in-law how to use the thermomix. This was so easy to make and has a lovely taste and consistency. We had it with ice-cream 3 nights in a row. One batch made enough to 3/4 fill two small preserving bottles and we still have one unopened in the fridge for our next guests. On every level, this was a success in my family.
