Ingredients


2cups seasonal vegetables
1 tablespoon fresh ginger finely chopped
2 tablespoons soy sauce
1 tablespoon vegetable oil
1 tablespoon mirin or chinese wine
1 tablespoon oyster sauce
1 teaspoon sesame oil
2 teaspoons white sugar
juice and zest of 1 lemon
1 large chicken breast, sliced
1 tablespoon toasted sesame seeds, to garnish
2 green shallots, finely sliced


Preparation

1.

Method:

  1. Place the vegetables evenly into the base of the varoma, place the lid on top and set aside.
  2. Put the ginger, soy sauce, vegetable oil, mirin, oyster sauce, sesame oil, sugar, lemon juice and zest into the TM bowl at cook for 2 minutes/varoma/speed 1.
  3. Add the sliced chicken breast to TM bowl. Secure the varoma on top and cook for 6 minutes/varoma/reverse/Speed 1.
  4. Transfer to a serving plate and garnish with sesame seeds and sliced shallots. Serve with steamed jasmine rice.

Love So yummy I nearly exploded! Mmmmmmmmmmmmmmmm. I served it with brown rice which soaked up the juices beautifully. The vegetables I used were sugar snap peas, red capsicum and the white part of the spring onions (sliced finely). I also added a shredded kaffir lime leaf. So amazingly yummy, five stars! I have only had my TMX for 2months and found this recipe easy and perfect.
I doubled the chicken and still had plenty of sauce to pour over the finished dish. Thanks Cooking

There's no need for any

There's no need for any water. There is enough liquid from the sauces/juice + the cooking time is relatively short. If you were to increase the recipe, you may also want increase the amount of sauce ingredients too.

May I ask a silly question? 

May I ask a silly question?  Do you put water in the TM jug for this recipe?  How does it steam the veggies without liquid?  I'd love to try this recipe but am too scared incase it wrecks my TM.  Any tips would be a great help as I'm a relatively new user.  Thanks.

This was really yummy!  I used the butterfly just to be safe, and I needed to cook the chicken a few minutes longer than the recipe stated but no shredding.  I replaced the lemon zest and rind with Lemon Extract and left out the Oyster sauce and it was still delish, will def make again.

I always use my butterfly if im worried about breaking down my chicken. also cut your chicken in larger chunks and use thighs as a preference. Smile

I cooked this tonight and it

I cooked this tonight and it was a big success. It fed two adults and two toddlers. I used 500g of chicken thigh fillets and I also doubled the sauce (we like a lot of sauce in this house!)

I cut the chicken into larger pieces (each thigh into about 3 or 4 pieces.

I might try adding garlic next time, and possibly even try adding the garlic, ginger and oil first, saute that and then add the rest of the ingredients.

Mine too shredded and I had

Mine too shredded and I had it in reverse speed soft! But, awesome flavour! Next time, I would put the veggies on when the sauce is cooking and add two teaspoons of cornflour mixed with a little water to the chicken bout 2 mins before the end of cooking time.

:bigsmile:  What a fabulous dish!!! I did the double vegies idea as suggested above in the varoma for a bit before the chicken and it fed out family of 5 no worries Wink - THANKS for sharing this recipe - will have it again for sure!


 

I have made this twice now

I have made this twice now and it's worked fine. I like my veggies cooked but with a bit of crunch (and I like to make heaps of veg) so I put them on for a little bit longer first to get them cooking before adding the chicken to the bowl. The chicken really doesn't need any longer than the recipe says otherwise it would probably overcook. The first time I made it I actually pulled the chicken out and kept it warm because I needed to cook the veg a bit longer. Maybe try slicing your chicken just a little bit thicker if it's shredding?

Hi Maisthermomix, the only thing I can guess is that it was due to the longer cooking time. Perhaps you can try and cook it on slow speed next time (or even put the dial between slow speed and speed 1.) Can anyone else offer any suggestions here?

Great taste unfortunately my

Great taste unfortunately my chicken shredded also and I defently had it on reverse however I did cook it altitude longer as my chicken was partly frozen. Any ideas on what I did wrong?

Hi Chubbychops - this recipe has been tested several times, so I don't know why you weren't successful. I actually made this for dinner tonight using chicken thighs (with carrots, sugar snap peas and mushrooms.) I garnished it with sesame seeds and coriander - it was great!  (NB: I used 60g lemon juice). Make sure you are using young, fresh ginger and ensure you select REVERSE SPEED to ensure the chicken isn't shredded - soft speed to 1 should be fine.

TIP: I personally like my vegetables a little crisp, but you can add another minute or two to the cooking time if you like them well cooked.

Not sure what happened to my

Puzzled Not sure what happened to my dish. Followed the instructions and all I could taste was ginger not to mention that my meat litterally shredded. Perhaps putting chicken into varoma bowl may make a difference,or using thigh meat. Not sure if i will attempt again.

Hi Andrea - Glad you liked it! I use a citrus zester, which I casually run down the length of the lemon. It creates lovely long, thin strands of zest - I don't try and remove every last bit of zest from the lemon and definitely no white pith. Certainly, alter the amount of zest to suit your preferences - I personally love a good hit of citrus.

Would probably use slightly less lemon rind next time (depends on the size of your lemons I guess) but this dish was so so tasty. Will definitely make this again. I put two layers of veggies in the varoma and steamed them for a few minutes before putting in the chicken to give them a head start.

We had this tonight for dinner.  Used a mixture of carrots, broccoli, cauliflower, mushrooms for veggies.  Added cashews and bean sprouts just prior to serving.  Was pretty delicious.  We doubled the recipe so that we would have lots for left-overs.  Great flavor!  Wink
