Recipe's preparation
Place
flour, butter and salt into TM bowl and mix for 10 seconds on speed 6.Add
water and mix a further 5-6 seconds
on speed 6 to form a rough dough.
Add water as necessary to bind.Turn
mixture onto floured ThermoMat and knead lightly.Keep
in fridge in flat disc before use in recipes of choice.

This was the fastest and easiest pastry ever. Did not crumble when cut either. Tasted good as well. The onle thing that I would do next time is omit the salt and put sugar in its place. I was making a Apricot pie.

WOW. This takes me back to the early 70's when I'd be watching my mother cook, no Thermomix back then She said rule of thumb for good pastry is 1/2 shortening to flour. Exactly what your recipe states. Seems like some things never change and it works every time.

Really good, made in TM5 on a houseboat with minimal utensils & a slightly dodgy oven. Used a bbq foil tray for apple pie. Ripper mate! Then made the next day like a biscuit, brushed with a bit of butter, sprinkled brown sugar over. Everyone loved it. This is in my collection, thanks for posting.

Yes you would need to blind bake the pastry first, otherwise you run the risk of your quiche having a soggy bottom.

we use to be able to freeze some of the pastry we use to make in one of the bakery's I was working in, especially when we were in a busy period and had a lot of orders ( Christmas and Easter periods).
