Steamed Prawn and Chicken Dumplings

Ingredients

35 piece(s)

Filling

  • 250 g Chicken, diced, 3 cm cubes
  • 250 g green prawns, peeled
  • 2 spring onions/shallots
  • 1 can water chestnuts, drained
  • 1 egg
  • 40 g fish sauce
  • 1 teaspoon white pepper, ground
  • 1 tablespoon brown sugar, or palm sugar
  • 40 g oyster sauce
  • 4 garlic cloves, peeled

Wontons

  • 1 package wonton wrappers
  • 1 egg, beaten with 1 tbsp of water
  • spray oil for greasing

Rice

  • 300 g Jasmine rice
  • 750 g water

Recipe's preparation

    Filling
  1. Place garlic in bowl and chop for 2 sec/ speed 7

    Add chicken and finely chop by pressing turbo twice

    add green prawns, sping onions water chestnuts and chop for 3-5 sec/ speed 7 depending on your perferred consistancy

    add fish sauce, oyster sauce, white pepper, sugar and mix  for 8 secs/ speed 4 on reverse Counter-clockwise operation until incorparated. 

     

  2. Dumplings
  3. Lay wonton wrapper on clean and dry bench, fill with a teaspoon of mixture, brush the edges of the wonton with the egg/water wash as pictured

  4. Close the sides by lifting corners and pinching them

    Spray the Varoma with oil (optional)

    Place the dumplings into varoma basket and tray  

    Do not bunch them up as they will expand as the cook

  5. Add water to bowl

    Place simmer basket in teh bowl, add rice to simmer basket and rinse with lid & MC on 5 sec / speed 9. 

    Place Varoma in position and steam for 15-18mins/ speed 4 / Varoma temp.

     

  6. If 2 batches are required place wontons in Thermoserver to keep warm, while the 2nd batch steams.

    Alternatively freeze remaining dumplings or 1/2 the batch

    Server with rice, curled shollots and a simple dipping sauce.

Tip

This recipe is large enough that you may have to do 2 batches. You can enjoy the first batch while 2nd batch is steaming, or freeze some of the dumplings or 1/2 the recipe to suit.

If you are steaming without the rice, you can reduce speed to 2

Meatballs can be steamed without wrapping in wonton wrapper to be added to an asian soup or have with a simple dipping sauce. This would make in GF, no carbs.

Serve with dipping sauce such as soy sauce or sweet chilli sauce. 

Garnish with strips of shollots that have been curled by sitting in iced water for a couple of minutes.

gluten free version , use rice paper to wrap.

egg free, omit egg in mixture and use water to seal wontons.

    Yum, I used 3/4 of the fish sauce & May only use 1/2 next time. They were devoured by teen son & have raw left overs for the freezer. I mad a dipping sauce as well which I did in the thermo for about 5sec, speed 5.
    dipping sauce: 3 Tbsp light soy sauce, 1 red chilli, 2cm piece ginger, 1 tsp sugar, 1⁄2 tsp sesame oil

    Cooked in TM5, in two batches. A bit bigger than suggested, so got about 30. Took about 17 minutes to cook. I used both chicken and prawns, and I added lemoncrass and chillies to the mix. VERY tasty, and enjoyed by all.

    I used the yellow packet Wonton Wrappers from Coles, and they were perfectly fine. So nice not to have to cut the wrappers to size!

    Served with chilli dipping sauce left over from the Vietnamese restuarant, and also the left over sauce from the Asian Sticky Chicken recipe on this site tmrc_emoticons.)

    I encountered that too so I would put soup in a thermoserver or a bowl and dunk them there after steaming. Or if you want to leave them out of the soup, steam them on baking paper and leave space between them. Let them stand on a serving platter before dunking in the soup. Hope this helps.

  • Yum!! My young kids & hubby

    Yum!! My young kids & hubby LOVED these. I also loved the flavours! Used the Thermomix to make filling for recipe only. No egg in what we made today (also it's listed in the ingredients but not in recipe prep for filling). Probably added 150g of raw green prawn meat. Added less fish & oyster sauce (3/4 of recipe) & flavour was still more than fine. Used cornflour mixed with water to stick folded wonton wrapper together. Filling and wrapper held together without eggs, no problems.

    In a saucepan, boiled some water & added wontons in batches and gently separated wontons & stirred with spatula to stop them sticking together. Once pan returned to the boil again & wontons floated to the top, the wontons were ready. Will definitely try varoma next time! (Sure it would be much easier). Served with noodles. 

    Used 'Yunion Wonton Skin (extra thin ideal for soup)' from Asian supermarket - made in WA, beautiful wonton wrapper consistency when cooked.

    I was just wondering what wonton papers people are using as I tried steaming wontons & they were gluggy & sticky so not sure what I did wrong.  I used the yellow packet of fresh wonton wrappers you find in cold section at supermarket.

    As suggested by others I substituted carrots ( 120g ) and made up the rest with chicken thigh fillets.  ( I didn't add an egg to the chicken mixture). In a separate pot  I made a Chinese broth with chicken stock and included vegetables Bok Choy and mushrooms. As there was too much chicken mixture I spooned it into the broth and cooked them while the dumplings were steaming. The left over chicken stock from the steaming went into the soup. I added the steamed dumplings to the soup. Absolutely delicious. Better than the local Chinese restaurant. Will definitely be a favourite.  Love

    this is officially my sons favorite dinner, lunch and shock horror i have seen him eat them for breakfast!

    very tasty and very easy to make your own, i have made this recipe about 30 times now and each time i make little changes depending on what i have, chinese cabbage, bean sprouts, ginger, hoisin sauce

    i keep everything in the freezer and mince the fronzen chicken and prawns straight from the freezer,

    i usually made a double batch so i mix in a very large bowl, and steam in batches, i also freeze extra dumplings (on baking paper on a tray - then into a freezer bag once they are frozen so they dont stick together) and steam them from frozen whenever we want them

    Wow. These are good!  I used pork instead of chicken.  My youngest daughter can be really fussy- she gobbled down several of these and when the plate was empty she asked me to make some more!  The batch made lots of dumplings.  I froze several trays for future quick dinners and for entertaining. I think I will make another batch to freeze and use for nibbles to serve with drinks over the silly season.  Thanks- a great recipe.

    These were absolutely delicious! And very easy to make. I am a new TM owner and so excited to try some new recipes like this that I never would have tried without TM.
